Buffalo Chicken Smash Burgers
Smash burgers…or tacos?
Honestly, I’m still calling these a burger, but it’s totally up to you what you want to call them. All I know is that either way they are delicious!
Smash burgers have taken over the last year and I’ve done a few variations including the traditional, salmon and now these buffalo ones! I love this style burger because the tortillas infuses with all of the flavors from the burger. Not to mention, it’s super light and not carb heavy.
Ingredients:
ground chicken– turkey works too, but I would not suggest ground beef as it does not pair well with buffalo sauce
ranch seasoning
red onions
buffalo sauce
mozzarella cheese
taco size tortillas– low carb, GF, whole wheat or flour
shredded lettuce
cucumbers
tomatoes
avocado
ranch dressing

Cooking the tortilla with raw chicken- is that ok?
It is super important that you cook both sides before adding on the cheese and tortilla! If the inside is not cooked all the way through before you add on the tortilla, don’t worry, it will still be fine. just continue cooking for a few extra minutes. Just to be safe, do not add the tortilla to raw ground chicken.
Did your kids eat this?
Yes..and no!
Two of my kids ate this (without the extra buffalo sauce) and one of my kids just ate a cut up meat patty with cheese and ranch on top.
30 minute Busy Mom Dinner Series
I started this series thinking it would be a few quick and easy options for busy weeknights, but I really don’t see this series ever ending or at least anytime soon!
obviously you don’t have to be a mom to make these meals and enjoy them, but I did set out with a purpose and that was to help moms feel a little less stressed in the kitchen when it came to putting easy + healthy meals on the table for their family!

Buffalo Chicken Smash Burgers
Ingredients
- 1 lb ground chicken or turkey
- 1 1/2 tbsp ranch seasoning
- 1/4 cup buffalo sauce
- 1/4 cup diced red onions
- 8 taco size tortillas I used GF, but you can use low carb, whole wheat or flour
- 3/4 cup shredded mozzarella cheese
- 1 cup shredded romaine lettuce
- 1/2 cup diced cucumbers
- 3/4 cup diced tomatoes
- 1 avocado- sliced
- 1/2 cup ranch dressing
- extra buffalo sauce for topping
Let's Make It
- In a bowl, combine the ground chicken with ranch seasoning, buffalo sauce + onions. Roll into 8 balls, about 1/3 cup of the mixture per ball.
- Over medium high heat, add 3-4 of the burger patties to the pan, smashing them down to flatten. Cook for 4-5 minutes, flip and continue cooking for another 4-5 minutes or until the burger is cooked to 165℉.
- Top the burgers with cheese and them place a tortilla on top, smashing the tortilla into the burger + cheese. Once the cheese is melted, flip the burger one more time to crisp the other side of the tortilla.
- Add lettuce, cucumbers, tomatoes, avocado, ranch + more buffalo sauce to each burger. Serve immediately.
