Let me just say… y’all nailed it picking this as the first recipe to share from our latest camping trip. These Blackstone Nachos were a massive hit—easy, fun, and perfect for feeding a hungry crowd after a long day outdoors.
We made them right on the Blackstone griddle, and I’m telling you, this might be my new go-to camping meal. No extra dishes, no fuss, and everyone gets to load up their plate with exactly what they want.
Here’s how it went down:
I started by cooking 1.5 pounds of ground beef straight on the griddle, seasoning it up with a packet of taco seasoning. While that browned, I popped open two cans of refried beans, added a little salsa in and warmed them up in a little pot—yes, right on the griddle. No stove necessary.
Once the beef was done, I grabbed a big ol’ bag of tortilla chips and spread them straight onto the griddle. From there, it was a glorious layering situation: refried beans, seasoned beef, loads of shredded cheese… then I covered it all with foil (or the Blackstone warming dome) to melt everything together.

Blackstone Nachos
Equipment
- Equipment Needed: Blackstone griddle, small pot, hot food cover or foil
Ingredients
- 1.5 lbs ground beef
- 2 tbsp taco seasoning or 1 packet
- 2 15 oz cans refried beans
- 1-2 large bags tortilla chips sturdy ones like restaurant-style
- 2 cups shredded Mexican cheese blend
Optional toppings:
- Diced tomatoes
- Shredded lettuce
- Sliced jalapeños
- Sour cream
- Salsa
- Guacamole
- Pickled onions
- Cilantro
Let's Make It
- Preheat your Blackstone griddle over medium heat.
- Add the ground beef directly to the griddle and cook until browned, breaking it up as it cooks. Sprinkle in taco seasoning and stir to combine.
- While the beef cooks, place a small pot on the corner of the griddle and add the refried beans. Stir occasionally until heated through.
- Once the meat is cooked and beans are hot, remove the meat, lay down a big layer of tortilla chips on the griddle.
- Spoon warmed beans and cooked beef evenly over the chips. Top generously with shredded cheese.
