If you’ve been following along with my pickle series, then you already know… we’re not doing boring over here. And these bacon-wrapped dill pickle poppers? They might actually be one of my favorite things I’ve made in this series so far.
I took everything we all love about jalapeño poppers—that creamy, cheesy center, the crispy bacon, that perfect bite—and gave it a twist using something I always have in my fridge… pickles.
And if you’re a pickle person, you already know. That salty, tangy crunch just hits different. It cuts through the richness of the cheese and bacon in the best way and makes these feel a little lighter while still giving you that comfort food vibe.
I originally made these thinking they’d be a fun snack to test out… and they were gone before I could even grab seconds. My family devoured them, and now they’ve officially made it into our regular rotation for get-togethers, BBQ nights, and honestly even just random afternoons when I want something snacky but still filling.
These are the kind of recipe that checks all the boxes:
They’re easy, they’re different, they’re high-protein, and they feel like something you’d order at a restaurant but made right at home.
Why You’ll Love These Pickle Poppers
First, they’re incredibly easy to make. No complicated prep, no long ingredient list, and they cook quickly whether you’re using the air fryer or throwing them on the smoker.
Second, they’re perfect for entertaining. These are one of those appetizers that people can’t stop talking about. You set them out, and within minutes someone’s asking, “wait… what are these?”
Third, they’re surprisingly balanced. You get protein from the cheese and bacon, and that pickle adds just enough acidity to keep everything from feeling too heavy.
And finally, they’re just fun. Which I feel like we all need more of when it comes to food.
When to Make These
These are perfect for:
- summer BBQs
- pool days
- game day spreads
- holiday appetizer tables
- or honestly just when you want something salty, crispy, and satisfying
They also fit right into that “high-protein snack” category, which I know so many of us are trying to incorporate more of without sacrificing flavor.
Air Fryer vs Smoker (Which is Better?)
You really can’t go wrong here—it just depends on what you’re going for.
The air fryer is quick, easy, and gives you that crispy bacon in under 20 minutes. Perfect for weeknights or when you need something fast.
The smoker or BBQ takes things up a notch. You get that smoky flavor that pairs so well with the bacon and the creamy filling. If you’re already grilling or hosting, this is the way to go.

Tips for the Best Pickle Poppers
One thing I’ve learned making these a few times now—little details matter.
Pat your pickles dry before stuffing them. This helps the bacon crisp up instead of steaming.
Don’t overfill the center. I know it’s tempting, but too much filling will spill out while cooking.
Use thinner bacon if you can. It crisps faster and wraps more easily around the pickles.
And if your bacon needs a little extra crisp at the end, just pop them under the broiler for a couple of minutes. Game changer.
Flavor Variations You Have to Try
Once you make these once, you’re going to start thinking of all the different ways you can switch them up.
Try mixing buffalo sauce into the filling for a spicy version.
Add diced jalapeños for extra heat.
Swap the hot sauce drizzle for BBQ sauce for a smoky-sweet twist.
Or even sprinkle everything bagel seasoning into the filling for something a little different.
This recipe is super flexible, which makes it one you’ll keep coming back to.
How to Serve Them
I like serving these fresh out of the air fryer or smoker with a drizzle of hot sauce on top.
You can also pair them with ranch, chipotle aioli, or even a spicy mayo if you want a dipping option.
They’re perfect on a snack board with meats, cheeses, and crackers—or served alongside burgers, grilled chicken, or any summer meal.
Tips for Storage + Reheating
If you somehow have leftovers (which honestly… good luck), store them in the fridge for up to 2 days.
To reheat, pop them back in the air fryer for a few minutes to crisp the bacon back up. I wouldn’t recommend microwaving these because you’ll lose that texture.
