If there’s one thing I’ve learned about getting back into the school routine, it’s that the afternoons come fast—and the snack requests come faster. That’s why I’m kicking off my Back-to-School Fridge Prep series with a snack lineup that’s balanced, kid-approved, and totally prep-ahead friendly.
Let’s talk about today’s fridge snack box setup. It includes:
Strawberry Shortcake Protein Bites (no bake, high-protein, sweet tooth approved)
Chocolate Yogurt Dip (hello, creamy protein-packed dessert dip!)
Fresh strawberries for dipping
Trail Mix (our mix uses Bare strawberry banana granola, freeze-dried fruit, pretzels, popcorn, cashews, white chocolate chips, and a scoop of protein powder)

These no-bake bites taste like dessert but deliver 6g of protein each. Made with clean ingredients like almond flour, cashew butter, and freeze-dried strawberries, they’re a sweet snack you can feel good about tossing into a lunchbox—or popping into your mouth between carpools.
I usually make a batch of 15 and store half in the fridge for the week, and the rest in the freezer for backup. My tip: add the optional white chocolate chips for a true shortcake vibe—it’s a game-changer.
Chocolate Yogurt Dip
This dip is creamy, chocolatey, and naturally sweetened with honey. It takes about 60 seconds to mix up and makes plain strawberries taste like a chocolate-covered dream. I like to use a high-protein Greek yogurt like Oikos Triple Zero or Two Good for extra staying power.

Strawberry Shortcake Protein Bites
Ingredients
- ½ cup almond flour
- ¼ cup vanilla protein powder whey or plant-based
- ¼ cup cashew butter or almond butter for milder flavor
- 2 tbsp maple syrup or honey
- 1 tbsp coconut oil melted
- ⅓ cup freeze-dried strawberries crushed
- 1 –2 tbsp almond milk only if needed to bring together
- 2 tbsp white chocolate chips optional but recommended
- Pinch of salt
- Optional: white chocolate drizzle extra crushed strawberries and crushed shortbread cookies for topping
Let's Make It
- Crush strawberries: Add freeze-dried strawberries to a ziplock bag and crush with a rolling pin or your hands until finely crumbled.
- Mix dry ingredients: In a bowl, whisk together almond flour, protein powder, salt, and crushed strawberries.
- Add wet ingredients: Stir in cashew butter, maple syrup, melted coconut oil, and white chocolate chips. If mixture is too dry, add 1 tbsp of almond milk at a time until it holds together.
- Form bites: Roll the mixture into 15 balls.
- Optional coating: Roll in more crushed strawberries or coconut.
- Store: Keep in an airtight container in the fridge up to 1 week or freezer up to 2 months.
