Ingredients
  

  • ½ cup almond flour
  • ¼ cup vanilla protein powder whey or plant-based
  • ¼ cup cashew butter or almond butter for milder flavor
  • 2 tbsp maple syrup or honey
  • 1 tbsp coconut oil melted
  • cup freeze-dried strawberries crushed
  • 1 –2 tbsp almond milk only if needed to bring together
  • 2 tbsp white chocolate chips optional but recommended
  • Pinch of salt
  • Optional: white chocolate drizzle extra crushed strawberries and crushed shortbread cookies for topping

Let's Make It
 

  • Crush strawberries: Add freeze-dried strawberries to a ziplock bag and crush with a rolling pin or your hands until finely crumbled.
  • Mix dry ingredients: In a bowl, whisk together almond flour, protein powder, salt, and crushed strawberries.
  • Add wet ingredients: Stir in cashew butter, maple syrup, melted coconut oil, and white chocolate chips. If mixture is too dry, add 1 tbsp of almond milk at a time until it holds together.
  • Form bites: Roll the mixture into 15 balls.
  • Optional coating: Roll in more crushed strawberries or coconut.
  • Store: Keep in an airtight container in the fridge up to 1 week or freezer up to 2 months.
