Crush strawberries: Add freeze-dried strawberries to a ziplock bag and crush with a rolling pin or your hands until finely crumbled.
Mix dry ingredients: In a bowl, whisk together almond flour, protein powder, salt, and crushed strawberries.
Add wet ingredients: Stir in cashew butter, maple syrup, melted coconut oil, and white chocolate chips. If mixture is too dry, add 1 tbsp of almond milk at a time until it holds together.
Form bites: Roll the mixture into 15 balls.
Optional coating: Roll in more crushed strawberries or coconut.
