Ingredients

- 10 –12 egg roll wrappers or gluten-free tortillas cut to size
- 2 cups cooked chicken breast or rotisserie chicken
- 1 can black beans drained and rinsed
- 1 cup corn frozen or canned
- 1 red bell pepper diced
- 2 –3 green onions sliced
- 1 cup fresh spinach chopped
- 1 cup shredded cheese cheddar or pepper jack
- 1 tbsp taco seasoning or southwest seasoning blend
- Olive oil spray for air fryer
For the Cilantro-Lime Sauce:
- 1 cup Greek yogurt or sour cream
- Juice of 2 limes
- ½ cup fresh cilantro
- 1 jalapeño optional, for heat
- 1 tsp ranch seasoning or ¼ tsp each garlic and onion powder
- ½ tsp cumin
- Salt to taste
Let's Make It
- Make the sauce: Blend Greek yogurt, lime juice, cilantro, jalapeño, ranch seasoning, cumin, and salt until smooth. Set half aside for dipping.
