Air Fryer Southwest Eggrolls with Cilantro-Lime Sauce

Ingredients
  

For the Eggrolls:

  • 10 –12 egg roll wrappers or gluten-free tortillas cut to size
  • 2 cups cooked chicken breast or rotisserie chicken
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 red bell pepper diced
  • 2 –3 green onions sliced
  • 1 cup fresh spinach chopped
  • 1 cup shredded cheese cheddar or pepper jack
  • 1 tbsp taco seasoning or southwest seasoning blend
  • Olive oil spray for air fryer

For the Cilantro-Lime Sauce:

  • 1 cup Greek yogurt or sour cream
  • Juice of 2 limes
  • ½ cup fresh cilantro
  • 1 jalapeño optional, for heat
  • 1 tsp ranch seasoning or ¼ tsp each garlic and onion powder
  • ½ tsp cumin
  • Salt to taste

Let's Make It
 

  • Make the sauce: Blend Greek yogurt, lime juice, cilantro, jalapeño, ranch seasoning, cumin, and salt until smooth. Set half aside for dipping.
  • Mix the filling: In a large bowl, combine shredded chicken, beans, corn, peppers, onions, spinach, cheese, seasoning, and 1/4. cup of the sauce. Stir well to coat everything evenly.
  • Assemble: Spoon 2–3 tablespoons of the filling into each wrapper. Roll tightly and seal the edges with a dab of water.
  • Air fry: Spray basket with olive oil and place eggrolls in a single layer. Spray lightly on top. Air fry at 375°F for 8–10 minutes, flipping halfway through until golden and crispy.
  • Serve: With the remaining cilantro-lime sauce for dipping.
