Air Fryer Southwest Eggrolls with Cilantro-Lime Sauce
These crispy Air Fryer Southwest Eggrolls are the ultimate game day snack! Made in the PowerXL Air Fryer, they’re packed with chicken, beans, cheese, and veggies, then served with a creamy cilantro-lime dipping sauce. Perfect to prep ahead and reheat before kickoff.
10–12 egg roll wrappersor gluten-free tortillas cut to size
2cupscooked chicken breastor rotisserie chicken
1can black beansdrained and rinsed
1cupcornfrozen or canned
1red bell pepperdiced
2–3 green onionssliced
1cupfresh spinachchopped
1cupshredded cheesecheddar or pepper jack
1tbsptaco seasoning or southwest seasoning blend
Olive oil sprayfor air fryer
For the Cilantro-Lime Sauce:
1cupGreek yogurtor sour cream
Juice of 2 limes
½cupfresh cilantro
1jalapeñooptional, for heat
1tspranch seasoningor ¼ tsp each garlic and onion powder
½tspcumin

Let's Make It
Make the sauce: Blend Greek yogurt, lime juice, cilantro, jalapeño, ranch seasoning, cumin, and salt until smooth. Set half aside for dipping.
Mix the filling: In a large bowl, combine shredded chicken, beans, corn, peppers, onions, spinach, cheese, seasoning, and 1/4. cup of the sauce. Stir well to coat everything evenly.
Assemble: Spoon 2–3 tablespoons of the filling into each wrapper. Roll tightly and seal the edges with a dab of water.
Air fry: Spray basket with olive oil and place eggrolls in a single layer. Spray lightly on top. Air fry at 375°F for 8–10 minutes, flipping halfway through until golden and crispy.
Serve: With the remaining cilantro-lime sauce for dipping.
