My lazy night dinner that somehow still feels fancy
You know those nights where you literally cannot be bothered to cook a protein? Same. This is my go-to recipe for those nights. It’s quick, super satisfying, kid-approved, and honestly—kind of a showstopper even though it takes barely any effort.
We’re talking pre-cooked chicken sausages (I love Adele’s garlic or Italian ones), stuffed with cheese, tossed with peppers and onions, and baked in my favorite marinara (shoutout to Mozzetta—so good). That’s it. That’s the meal. And trust me, it hits every time.

Italian Stuffed Sausages with Peppers
Ingredients
- 8 cooked Italian or garlic chicken sausage links I use Adele’s
- 2 mozzarella string cheese sticks cut into 8 pieces
- 4 bell peppers sliced
- 1 small onion sliced
- 2 tbsp olive oil
- Salt & pepper to taste
- Italian seasoning to taste
- 1 jar Mozzetta marinara sauce you’ll use about 1/2 to 3/4 of it
- Optional: cooked pasta zucchini noodles, or roasted potatoes for serving
Let's Make It
- Preheat oven to 400°F.
- Slice sausages down the middle lengthwise (but not all the way through).
- Stuff each sausage with a piece of string cheese and place in a baking dish.
- Scatter sliced peppers and onion around the sausages.
- Spoon about 1 tablespoon of marinara sauce over each stuffed sausage.
- Drizzle with olive oil, and season everything with salt, pepper, and Italian seasoning.
- Bake uncovered for 20–25 minutes, or until the cheese is melted and veggies are tender.
- Serve over your choice of noodles, zoodles, or potatoes—or enjoy on its own!
