Arugula + Peach SUmmer Salad

Going meatless with this Arugula + Peach Summer Salad- fresh arugula, peaches, Banza Rice, mozzarella balls + basil with a balsamic glaze!

I have a busy week ahead of me, but that does not mean I can’t find the time to prep myself some food for the week!

Even though this salad doesn’t have meat, it’s still loaded with protein! Not only is it flavorful and so fresh, it also only took me about 10 minutes to make!

Ingredients:

  • fresh peaches– you want to use fresh, not frozen. I left the peel on the peaches, person preference though!
  • arugula– this is a leafy green that has tons of flavor- a great way to elevate the simplest of dishes!
  • mozzarella balls– they usally come in a little container with water. If you can’t find any, you can use sliced fresh mozzarella, just cut it into cubes. mOr just switch it out for your favorite cheese- feta or goat cheese would be so good!
  • Banza Rice– It’s made from garbanzo beans, so it’s loaded with protein! You can find it right next to the pasta noodles or in the gluten free section at the grocery store.
  • fresh basil
  • olive oil
  • salt + pepper
  • balsamic glaze or dressing

The Prep:

 

  • Boil the banza rice for 5 minutes, rinse with cold water.
  • In a small bowl, mix together the rice, olive oil, salt, pepper, garlic, basil, mozzarella + peaches.
  • In each container add 1½ cups of arugula. Divide the rice mixture into each container.
  • Store in the fridge for up to 5 days!
  • Top with glaze/dressing when your’e ready to eat!

Tips for this Meal Prep

We are going completely meatless this week with High Protein Smoothie Bowls made with Banza Rice +  and Strawberry Smoothie Bowls. I was able to prep both of these meals in less than 45 minutes!

Here is how i did it- step by step!

  • boil the Banza Rice for 5 minutes
  • while the rice is cooking slice the strawberries and peaches.
  • drain the rice and rinse with cold water
  • toss together the ingredients for the salad and add that to the containers with the arugula. 
  • after the salad is put away- blend up the cottage cheese with the strawberries.
  • Add the whipped cottage cheese to the bowls, top with strawberries, chia + granola
  • after everything is put in the fridge, you can clean all of this up in less than 10 minutes!

So easy!

Ingredients
  

  • 8 oz Banza Rice dried
  • 2-3 fresh peaches diced
  • 5 oz mozzarella balls
  • handful of fresh basil about 1/8 cup
  • 1 tbsp olive oil
  • ¼ tsp salt
  • tsp black pepper
  • ¼ tsp granulated garlic or fresh garlic
  • 6 cups fresh arugula
  • balsamic glaze or balsamic dressing

Let's Make It
