Meal Prep in 1 Hour

As part of my Meal Prep in 1 Hour Series, Tortilla Egg Cups are balanced breakfast- loaded with protein, veggies, healthy fats and just enough carbs to get your day going!

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!

I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!

Ingredients

These are totally customizable!

Feel free to switch out ingredients to whatever you love! The possibilites are endless, so don’t be surprised if I make these again in the future!

  • taco size tortillas- corn will be too mushy for this, so use whole wheat, gluten free or this wheat/corn blend that I love (picture below)
  • eggs- scrambled works best for these! I did use whole eggs for this meal prep and i have to say, it’s much better with scrambled!
  • spinach 
  • tomatoes
  • avocado 
  • feta cheese
  • bacon- nitrate free
  • everything but the bagel seasoning

 

Let's Make It!

all you need is a cutting board and some oven safe 2 cup containers. I have linked the ones I use below! I use these for so many recipes- they are a great price and save you so much time in the kitchen!

  • Preheat your oven to 400℉
  • spray each container with non-stick spray and place one tortilla in the middle, pressing down to make a cup
  • Fill each cup with 2 eggs, spinach, bacon, tomatoes, avocado and everything but the bagel seasoning
  • place cups on a baking tray and bake for 25 minutes or until the eggs are set
  • Once cooled, place the lids on and store in the refrigerator for up to 5 days

That’s it! these require no clean up at all!

Meal Prep Tips!

I have paired this prep with the Chipotle Beef + Avocado Bowls Both are so simple to make and it’s definetly a very fast prep!

  • I always start by chopping all of my veggies first and then clean up my work space!
  • Prepping the tortilla cups first so I could throw them into the oven while I prepare the meat for the chioptle beef bowls.
  • By the time tortilla cups were done, it was time to assemble the chipotle beef bowls.
  • Once the bowls were done and put away, I cleaned up, giving the tortilla cups time to cool down and when they were completely cool, I just threw the lids on and popped them in the fridge!

Ingredients
  

  • 4 taco size tortillas I love the handmade stlye wheat + corn blend by La Tortilla Factory for this recipe!
  • 8 eggs scrambled is best for this recipe!
  • 1/2 cup chopped tomatoes
  • 1 cup chopped spinach
  • 1 chopped avocado
  • 1/2 cup feta cheese
  • 4 slices of bacon cooked + chopped
  • 1 tbsp Everything But The Bagel Seasoning

Let's Make It
 

  • Preheat the oven to 400℉
  • Using your glass meal prep contianers (see link above) or any other oven safe dish (2 cup size), spray with non-stick cooking spray
  • Place one tortilla in the middle of each dish, press down and fill with 2 eggs (scrambled is best for this recipe), bacon, avocado, tomatoes, spinach, seasoning and feta cheese
  • Place cups on a baking sheet and bake for 25 minutes or until the eggs are set
  • When the cups have cooled down, place the lid on and store in the refrigerator for up to 5 days.
    These are totally customizable- switch up veggies, cheese + protein to make it your own!
