POV: you have goals, but like sushi!

This spicy salmon sushi bowl is a quick and easy way to satisfy that sushi craving and still keep it healthy!

I love eating this for a snack with some cucmber  chips, but this would also be great for dinner in a bigger bowl with sliced cucmbers, shredded carrots and cabbage!

The deets:

you can use either canned tunna or salmon for this. I know you are probably thinking canned salmon is extra fishy, but it’s not! I do love this one I found a Trader Joes and as always, for a good price!

this does make about 3 servings that are good for 3ish days!

  • 6oz canned salmon or tuna, drained
  • 1 tsp each of: sriracha, coconut aminos, sesame oil
  • 1 1/2 cup of brown rice
  • 1 mashed avocado
  • Green onions
  • Everything but the bagel seasoning
  • Spicy mayo: 1/4 cup mayo + 1 tbsp sriracha
  • Make it
  • mix the salmon with the sriracha, aminos and sesame oil
  • Add 1/2 of rice to each bowl
  • Top with avocado, then the salom and spicy mayo
  • Finish it off with green onions and everything but the bagel seasoning
  • Eat this with a fork or my favorite way- with cucumber chips

The layering for this is super simple:

  • just layer the rice, avocado, salmon
  • top with spicy mayo, green onions + everything but the bagel seasoning

Spicy Salmon Sushi Bowl

Part 3 of my On-The-Go Snack Series- This Spicy Salmon Sushi Bowl is my my healthy take on sushi and the serving size is great for an On-The-Go Snack.

Ingredients
  

  • 6 oz of canned salmon or tuna the one from Trader Joes is my Favorite
  • 1 tsp sriracha
  • 1 tsp coconut aminos or soy sauce
  • 1 tsp sesame oil
  • 1 avocado mashed
  • 1 1/2 cups brown rice or rice of choice
  • green onions
  • everything but the bagel seasoning
  • cucumbers for dipping

Spicy Mayo

  • 1/4 cup Mayo I use Primal Kitchen avocado oil mayo
  • 1 tsp sriracha extra if you like it spicy

Let's Make It
 

  • Drain the salmon or tuna and add to a bowl with 1 tsp each of sriracha, aminos, and sesame oil
  • add 1/2 cup of rice to each bowl
  • mash 1 avocado, divide into 3 servings and layer over the brown rice
  • top the avocado with the salmon
  • mix together the mayo + sriracha (add some honey if you desire, but I like mine spicy and leave out the honey)
  • drizzle on some spicy mayo and top with green onions + everything but the bagel seasoning
