Why I Started Making My Own Chipotle Bowls at Home
I’m a mom of three, and like most families, we’re always juggling something—soccer practice, homework, packing lunches, planning meals, and trying to squeeze in a little me time. So when dinner hits, I need something that checks all the boxes:

But what really pushed me over the edge was this: my kids were constantly begging for Chipotle… and then being disappointed. You know that feeling—when you’ve hyped up dinner in your head and then it’s dry, bland, or missing that signature zing? That was happening every time.
So I recreated our favorite bowl at home—and now? My kids ask for this version instead.
The Secret Is in the Chicken
Let’s be honest: the key to a really great Chipotle-style bowl is the chicken. It has to be juicy, a little smoky, and bold enough to carry the whole meal. I tested this air fryer version with chicken breasts and thighs, and thighs win every time for flavor and tenderness.
My homemade chipotle chicken marinade:
2 lbs chicken thighs
3 tbsp taco seasoning (I love the Siete brand—it’s clean and flavorful)
2–3 tbsp chipotle in adobo sauce (you can use more if you want it spicy)
2 tbsp honey (for balance)
1 tbsp coconut aminos (for umami + a hint of sweetness)
Juice + zest of 1 lime
Salt to taste
Let it marinate while you prep the rest, or throw it all together in the morning and let it hang out in the fridge until dinner. The chipotle and honey combo gives the chicken this caramelized, smoky crust when air fried—and the inside stays juicy and tender. It’s literally crave-worthy.
What Goes in the Bowl?
This bowl is all about layering your favorites. Here’s how we build ours:
Cilantro Lime Jasmine Rice
Simple but so key. I use jasmine rice because it’s soft and fragrant. Just cook, fluff, and stir in lime juice, zest, chopped cilantro, and a little salt.
Grilled Peppers & Onions
Slice red and yellow bell peppers and a red onion, toss in olive oil and a pinch of salt, and grill or sauté until softened and slightly charred. You can even throw them in a cast iron pan while your chicken’s air frying.
Frozen Guacamole Rounds

Pico de Gallo
I usually use store-bought if I’m in a hurry, but homemade is always welcome. Fresh tomatoes, onion, cilantro, lime, jalapeño—whatever your family likes.
Optional Add-Ons
Roasted corn, black beans, shredded cheese, sour cream, salsa, hot sauce—go wild. Everyone can make their bowl their own, which is part of the fun.

Air Fryer Chipotle Chicken Bowls
Ingredients
For the Chicken:
- 2 lbs 900g boneless, skinless chicken thighs
- 3 tbsp taco seasoning such as Siete
- 2 –3 tbsp chipotle in adobo sauce adjust to heat preference
- 2 tbsp honey
- 1 tbsp coconut aminos
- Juice + zest of 1 lime
- Salt to taste
For the Bowls:
- 1 cup 180g uncooked jasmine rice
- 2 cups water
- Juice + zest of 1 lime
- 1/4 cup chopped cilantro
- Salt to taste
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1/2 red onion sliced
- 1 tbsp olive oil
- Optional: beans roasted corn, frozen guacamole rounds, pico de gallo, shredded cheese, sour cream
Let's Make It
- Marinate the Chicken: In a large bowl, combine taco seasoning, chipotle in adobo, honey, coconut aminos, lime juice and zest, and a pinch of salt. Add chicken thighs and coat well. Let sit 15 minutes or up to overnight.
- Cook the Chicken (Air Fryer): Preheat air fryer to 380°F. Air fry chicken thighs for 12–15 minutes, flipping halfway through, until cooked through and slightly crisp on the edges. Let rest 5 minutes, then chop.
- Make the Cilantro Lime Rice: Rinse jasmine rice and cook with 2 cups water and a pinch of salt. Once done, stir in lime juice, zest, and chopped cilantro. Fluff and cover.
- Grill the Peppers and Onions: Toss bell peppers and onion in olive oil and a little salt. Grill on a hot cast iron skillet or grill pan for 6–8 minutes until charred and tender.
- Assemble the Bowls: Start with a scoop of cilantro lime rice. Add chopped chipotle chicken, grilled veggies, and top with frozen guac rounds, pico de gallo, beans, corn, or any toppings you love.
