Sheet Pan Breakfast Quesadillas
My simple meal prep hack to make a veggie + protein packed breakfast quesadilla all on one pan

Sheet Pan Quesadillas are pretty much one big ass breakfast burrito!
Yep, I said it.
Breakfast burritos are great for meal prep + the store really well in the freezer if you want to make them in bulk. But who wants to fold up a bunch of burritos and fry them up in a pan to get the edges crispy when you can just make them on a pan and call them a breakfast quesadilla?
I highly suggest making these on a big sheet pan and freezing half of the batch to eat on one of those weeks where you just don’t have time to prep anything! Of course, you will have to take this recipe and times it by 1.5-2 depending on the size of your sheet pan.
This is also a great recipe for the husbands! I know most of my meal prep enthusiasts here are women, so I want to encourage you to make these for your partner to eat on the go as the head off to work in the mornings. Who knows he might surprise you with flowers or that bag you’ve been wanting or that vacation you want to take…..ok maybe not. Actually, probably not, but he will be thankful!
Ingredients:
You can use whatever kind of tortilla you want for this. I used the gluten free ones from trader joe’s and they turned out so good, but I have used whole wheat, low carb and flour tortillas, all have been great!
- tortillas– wrap them in a damp paper towel and microwave for 30-60 seconds before hand to keep them from tearing while being folded.
- eggs
- cottage cheese– optional ingredient, but it adds extra protein and keeps the eggs soft + fluffy when reheated
- cheese of choice– i did colby jack
- salt + pepper
- bacon
- bell peppers– i love sliced mini bell peppers for this recipe
- tomato
- jalapeno
- onion
- cilantro
The Prep:
You will need to pans that are the same size.
If you do not have to pans that are the zame size, then use the bigger one to place on top.
I used a quarter sheet baking pan to make 4-6 servings. You may need to double the batch if you are using a bigger pan.
- Preheat the oven to 425°
- Scrambled the eggs with the cottage cheese, salt + pepper and cook over medium high heat until the eggs are firm and cooked all the way through.
- Set the eggs aside and cook the bacon.
- Pour the bacon grease out of the pan to sautee the peppers for about 2-3 minutes, just to soften them a bit.
- In a small bowl, mix together the tomato, jalapeno, cilantro, onion + cilantro. Season with salt and stir.
- Prepare a quarter sheet baking pan (13in x 10in) by generously spraying or rubbing olive oil around the sheet pan.
- Wrap the tortillas in a damp paper towel and microwave for 30-60 seconds before hand to keep them from tearing while being folded.
- Layer the torillas around the edges of the pan. The size of the pan depends on the number of tortillas you will need, but usually this will mean two for the length and one on each end of the pan. Cut one torilla in half to fill the hole in the middle. You will have to play around with this a little bit the first time you make it, just to make sure you will be able to fold it over without any gaps.
- Spread a thin layer of cheese on the bottom. Layer with the scrambled eggs, bacon, salsa, peppers and the rest of the cheese.
- Place the other half of the torilla in the middle (you may need a whole tortilla depending on the gap you have in the middle once the edges are folded over).
- Fold over the edges of the tortillas, spray generously with olive oil and place the other pan on top.
- Bake at 425° for exactly 20 minutes.
- Pull the pan off of the top while the quesadillas are cooling down.
- Cut into 4-6 servings and place into containers or wrap these up to be stored in the fridge or freezer.
- To reheat- place in a paper towel and cook for 1:15 seconds in the microwave.
Tips for this Meal Prep
I paired this meal prep with the Elote Chicken Salad. Both of these meals can be prepped and made in just about an hour, give or take!
Here is the exact or I prepared everything to get it done quickly and efficiently!
- The very first thing I do if I am doing anything with chicken is, get that cooked in the instant pot about an hour before I actually start my meal prep. Making it in the insant pot takes about 3 minutes of my time and I don’t techinically count this as the hour of meal prep. I highly suggest giving this method a try to save time.
- When it’s time to start my meal prep, I always start by chopping all of my veggies for each meal and setting them aside while I get to the cooking.
- I started by making my scrambled eggs and then in the same pan, i cooked the bacon + bell peppers.
- Next, I preheated the oven and started to build the sheet pan quesadillas.
- After the quesadillas were in the oven I chopped the chicken and made the dressing.
- This left me a few minutes to clean up a little before it was time to pull the quesadillas out of the oven.
- While those were cooling down, I made the salad, put it away and moved on to cutting the quesadillas.
- While the quesadillas were continuing to cool down, I finished my clean up.

- 1 cup bell pepper sliced or chopped
