Sheet Pan Fall Harvest Bowl
Bringing in all of the flavors of fall with this easy sheet pan meal loaded with roasted brussels sprouts, sweet potatoes, apple chicken sausage, feta + pomegranate seeds

This is one of those meals that can be an easy dinner or even great for meal prep. I like to make a huge batch of this and serve it for dinner, but there is always enough leftover for lunch the next day.
There is a lot of chopping involved with this meal, but don’t worry, after that, all you have to do is pop it in the oven and you are only left with one pan for clean u!
I know you’re already thinking- “do your kids actually eat this?” and the answer is yes and no! My kids definitely do not like brussels sprouts, but I will serve them the chicken sausage and sweet potatoes with a side of apple sauce or any other fruit. I do like to put a brussel or two on their plate and maybe one day they will decide they like them, but for now, it’s a no!
Ingredients:
- sweet potatoes
- brussels sprouts
- apple chicken sausage: I like the Aidells brand. I buy two packs to load this up and have enough protein to feed the whole family.
- salt
- pepper
- garlic powder
- olive oil
- kale
- feta cheese
- pomegranate seeds
- crunchy onion chili oil

DO I need an extra large baking pan for this?
Yes, you absolutely do!
I highly recommend making the small investment into an extra large baking pan! I use this pan for so many recipes, it is non stick without being teflon coated, it cleans well and fits most ovens. I do suggest making sure it will fit your oven by measuring it first!

30 minute busy mom dinner series
I started this series thinking it would be a few quick and easy options for busy weeknights, but I really don’t see this series ever ending or at least anytime soon!
Obviously you don’t have to be a mom to make these meals and enjoy them, but I did set out with a purpose and that was to help moms feel a little less stressed in the kitchen when it came to putting easy + healthy meals on the table for their family!

Ingredients
- 2 large sweet potatoes
- 5 cups chopped brussels sprouts
- 24 oz apple chicken sausage (8 links) I like the Aidells brand
- salt, pepper, garlic to taste
- 1 tbsp olive oil (use the spray to use less oil)
- 5 cups kale
- 1 2/3 cup pomegranate seeds
- 1 cup feta cheese
- crunchy onion chili oil found at trader joes or see shopping list above
Let's Make It
- Preheat the oven to 425℉
- Chop all of the sweet potatoes into tiny cubes, these do take longer to cook so I like to chop them pretty small so they cook evenly with the sausage and brussels.
- Wash + chop all of the brussels sprouts and chop the chicken sausage.
- Layer everything up on an extra large baking sheet (linked above) or spread into two pans. Season with salt, pepper, garlic and spray evenly with about 1 tbsp of olive oil. *** If you have parchment paper, I suggest lining the baking sheet with it for easy clean up.
- Roast in the oven for 20ish minutes, tossing with a spatula every 5 minutes or so. When the veggies are tender and the sausage is browned, you can remove from the oven.
- Awe over a bed of massaged kale (just rub it together to release the oils in the kale, this helps with digestion), top with pomegranate seeds, feta and crunchy onion chili oil or dressing of choice.

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!
I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!
