One-Pot Taco Rice & Bean Skillet (20-Minute High-Protein Dinner)
Ingredients
- 1 lb ground beef turkey, or diced chicken
- 1 tbsp olive oil
- Salt and pepper to taste
- 1-2 cups chopped veggies onion, bell pepper, zucchini, corn
- 1 pouch Somos Taco Simmer Sauce
- 1 pouch Somos Mexican Black Beans
- 1 pouch Somos Cilantro Lime Rice
- Juice of 1 lime optional
Optional Toppings (highly recommend)
- Avocado
- Sour cream or Greek yogurt
- Shredded cheese
- Fresh cilantro
- Lime wedges
- Crushed tortilla chips
Let's Make It
- Heat skillet over medium heat. Add olive oil and protein. Cook until done.
- Add veggies and sauté 3–4 minutes.
- Stir in taco simmer sauce, beans, and rice.
- Cover and simmer 5–8 minutes.
- Finish with lime juice and serve with toppings.
