Not Your Mama’s Sloppy Joe’s

The one dinner you absolutely ate as a kid- this one is just made a little healthier using ingredients you probably already have on hand. Your kids will LOVE this recipe!

Sloppy Joe’s were definitely one of those meals we ate a lot as I was growing up and although I loved them I never really thought about why  we ate them so much. Now I know that it was probably because my mom was too tired and needed to get dinner on the table. Not to mention, ground beef is cheaper and easier to make than chicken or steak. 

 

This homemade version will definitely take you back to your childhood and make you wonder why you even ate the mixture from a can in the first place! And it honestly doesn’t even take that much more effort, other than chopping up a few veggies, most of the ingredients you probably have on hand!

 

Ingredients:

 

  • ground beef- I suggest an 85/15. You can also use ground turkey if you want!
  • green bell pepper
  • onion
  • garlic 
  • salt 
  • pepper
  • paprika 
  • chili powder
  • ketchup
  • mustard
  • tomato paste
  • coconut aminos 
  • vinegar 
  • cheddar cheese
  • slider buns
  • pickles 
  • pickled onions

Serving suggestions:

 

I love to eat these on a slider bun, they are so much easier to handle for the kids. I mean, we don’t call them sloppy joe’s for nothing! My kids did not care for the pickles or pickled onions, but they devour about 2 sliders each every time I make them!

You could also top these with coleslaw and serve with sweet potato fries!

Healthy Mom Option-

 

I know your family loves dinners loaded with carbs and cheese, but that does not always support your nutrition goals. So how do we create that balance without feeling like we are doing so much extra work or cooking 3 meals for dinner?

 

I always try to figure out what I can make on the side + pull out of the meal I am already making, which is usually the protein. For this recipe, I suggest serving just the sloppy joe mixture over a bed of coleslaw with the pickled onions + pickles, with a small side of sweet potato fries.

30 MInute Busy Mom Dinner Series

I started this series thinking it would be a few quick and easy options for busy weeknights, but I really don’t see this series ever ending or at least anytime soon! 

obviously you don’t have to be a mom to make these meals and enjoy them, but I did set out with a purpose and that was to help moms feel a little less stressed in the kitchen when it came to putting easy + healthy meals on the table for their family!

Ingredients
  

  • 12 slider buns or 5-6 hamburger buns
  • 1 1/2 lbs ground beef
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced yellow onion
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 2 tbsp mustard
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 2 tbsp tomato paste
  • 1/2 tsp chili powder
  • 1 tsp white vinegar
  • 1/4 tsp paprika
  • 2 tbsp coconut aminos or soy sauce
  • 1/4 tsp black pepper
  • salt to taste
  • 6 slice of sharp cheddar cheese
  • 1/2 cup pickled onion
  • 1/2 cup sliced pickles

Let's Make It
 

  • In a large pan over medium high heat, add in the olive oil, bell peppers + onions, cook for about 2 minutes before adding in the ground beef. Break up the ground beef as it is cooking.
  • Once the ground beef is cooked and no longer pink, add in the garlic, salt, pepper, paprika, chili powder, ketchup, tomato paste, mustard, vinegar + coconut aminos. Mix everything together until well incorporated and then turn the heat down to low.
  • Let that simmer for just a bit while you toast your slider buns. I like to butter the open faced buns and throw them in the oven at 425℉ until browned around the edges.
  • Once the buns are toasted you can layer up the meat mixture + cheese and pop the sliders in the oven for about 5 minutes to melt the cheese,
  • Once the cheese is melted I love to add pickled onions + pickles to my sliders, but that is totally optional! Just add the top buns to the sliders and enjoy with fries or coleslaw!
