The Steak bite Dinner I Keep Coming Back To
This is one of those dinners that just never gets old for me. It’s cozy, it’s filling, it feels a little bit elevated… but it’s still simple enough to make on a weeknight.
And honestly—anything that involves steak + potatoes + a creamy sauce is going to be a yes in my house.
But THIS one? It’s next level.
Why These steak bites are So Good
You’ve got:
Crispy baked potatoes
Juicy, perfectly seared steak bites
Garlic, herbs, and Dijon for flavor
And the most insane parmesan cream sauce
And I’m not even kidding when I say…
I pour that sauce over my entire plate.
Potatoes, steak, green beans… everything.

My Go-To Steak bites of Choice (This Matters)
The recipe calls for sirloin……but I almost always use ribeye.
It just turns out so much more tender, flavorful, and juicy—and when you’re cutting it into steak bites, it cooks up perfectly.
If you want this recipe to feel like a restaurant meal at home… go ribeye.
Why This Works for Weeknights
I know steak dinners can feel like a “weekend thing”…
but this one is actually super doable during the week.
Minimal prep
Simple ingredients
Everything cooks pretty quickly once you get going
And it feels like something way more special than the effort it takes.
What to Serve With these steak bites
Even though this is already a full meal… I almost always add a veggie.
And yes… the sauce goes on those too
Green beans (my favorite with this)
Asparagus
Simple side salad
Roasted broccoli
Make It Your Own
Swap ribeye for sirloin if you want leaner
Add mushrooms to the steak skillet
Mix a little garlic into the potatoes
Add crushed red pepper for a little heat
Tips for this Meal Prep + storage
Let steak sit at room temp before cooking
Don’t overcrowd the pan—this gives you that perfect sear
Use freshly grated parmesan for the smoothest sauce
Salt your potatoes well—it makes a huge difference
Store components separately if possible
Reheat steak gently so it doesn’t overcook
Sauce may thicken—just add a splash of milk or cream
