Lemon Dijon Chicken Marinade

There is nothing cute about raw chicken, i get it, but I promise this Lemon Dijon Chicken Marinade is so good! 

Give me a big bowl of orzo pasta with artichokes, tomatoes, spinach and this chicken on top. YUM!

I usually make this with chicken breast, but it is really good with chicken thighs, too!

Pro Tips:

  • do not marinate your chicken for longer than 3 hours. There is citrus in the marinade so it can give your chicken a weird texture if it marinates for too long.
  • Save any leftover chicken for salads- paired with my Lemon Vinaigrette. 

Lemon Dijon Chicken Marinade

Tangy lemon and zesty dijon with herbs and spices- makes great leftover chicken salads paired with my Lemon Dijon Dressing!

Ingredients
  

  • 3 large chicken breast cut in half (through the middle) to make 6 thinner breast
  • 1 lemon zested and juiced
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 tsp rosemary
  • 1/4 tsp pepper
  • 1/2 tsp parsley
  • 1/4 tsp paprika

Let's Make It
 

  • Slice the chicken in half (through the middle) to make 6 thiner breast. Doing this allows for the chicken to cook faster and helps to avoid drying out the chicken.
  • Add all of the ingredients in to a ziplock bag or bowl and mix well. Add the chicken to the bag- giving it a good toss to make sure all the breast are coated well.
  • Let the chicken marinate for 1-3 hours.
  • Prepare on grill, in the oven, air fryer or crockoot.
  • ****Can substitute for chicken thighs!
