Homemade Marshmallows

One of my favorite ways to enjoy these marshmallows is in a cozy cup of high-protein hot chocolate. Simply warm up a Premier Protein Winter Mint Chocolate shake on the stove or in the microwave, pour it into a mug, and top it with a generous pile of homemade marshmallows. They’ll slowly melt into the hot drink, creating a creamy, indulgent experience with a healthy twist.

 

These marshmallows aren’t just a treat—they’re a little celebration of balance. By swapping traditional sugar for golden blue agave syrup and pairing them with a high-protein, low-sugar hot chocolate, you can satisfy your sweet tooth without compromising your health goals.

 

Ingredients:

 

• 1/3 cup cool water

• 1/3  up boiling water

• 4 tbsp grass-fed gelatin

• 1 cup golden blue agave syrup

 

Instructions

 

1. Prepare the Gelatin Base

In a large mixing bowl, sprinkle the gelatin over the cool water. Let it sit for about 5 minutes to bloom. This step is crucial for achieving that signature marshmallow texture.

 

2. Boil and Combine

Heat the boiling water and pour it over the bloomed gelatin, whisking until completely dissolved.

 

3. Add the Agave Syrup

Stir in the agave syrup and transfer the mixture to the bowl of a stand mixer (or use a hand mixer).

 

4. Whip It Up

Beat the mixture on high for 8-10 minutes until it becomes thick, glossy, and nearly triples in volume. It should look like fluffy marshmallow cream.

 

5. Set the Marshmallows

Pour the mixture into a parchment-lined baking dish and spread it evenly. Allow it to set at room temperature for 4-6 hours or overnight.

 

6. Cut and Store

Once set, lift the marshmallow slab out of the dish and cut it into cubes with a greased knife or kitchen scissors.

Storing Your Homemade Marshmallows

They’ll stay fresh for up to two weeks—although they’re so delicious, they probably won’t last that long! Avoid refrigerating, as it can cause them to become sticky and lose their texture.
