High Protein Spinach Artichoke Dip
This is part 2 of my on-the-go snack series!
This High Protein Spinach Artichoke Dip turns one of your favorite dips into a healthy snack that’s perfect for meal prepping! But did I mention, it’s even a 0 point snack with Weight Watchers?!?
The deets:
Using just a few simple ingredients, this batch makes enough for 5-6 snack size servings that stay fresh for up to 6 days!
Serve this with your favorite, chips or crackers, you’re going
to love this!
- 24oz of low fat cottage cheese
- Juice of 1 lemon or at least 2 tsp
- Heaping 1/4 tsp garlic powder
- 1/4 tsp parsley
- 1/4 tsp salt
- 1/4 tsp pepper
- 14 oz can of chopped artichokes (drained, not in oil)
- 3 chopped green onions
- 8oz frozen spinach
Common questions:
- why frozen and not fresh spinach? well you want the spinach to be wilted and not crunchy, plus, the wateriness of the frozen helps the base of the dip not be so thick. If you do decide to use fresh, cook it down for just a few minutes before adding it into the dip,
- Can is blend the cottage cheese first? You sure can! if you think the curds of the cottage cheese will bother you, go ahead! I don’t mind the cottage cheese, but i’m sure it wil be a littel creamier, I just preffer less steps and less mess to clean up!
You are going to want this dip to sit for at least and hour so all of the flavors can marinate, or overnight!
This does stay good for up to a week!
Serve with vour favorite chips or crackers- ‘ live these GF ones from Trader Joe’s
Let me know if you guys try this!
