This easy crockpot chicken and gravy over mashed potatoes is the ultimate comfort food dinner. Made with simple ingredients, tender chicken breast, and a rich homemade gravy — perfect for busy weeknights.
Creator: Leslie Stokes
There are nights when I want dinner to feel like a hug — but I don’t want to work for it. This crockpot chicken and gravy is exactly that kind of meal. Simple ingredients, no weird shortcuts, and the kind of comfort food that everyone at the table actually wants to eat.
I love using chicken breast here because it’s what I usually have on hand, and once it’s slow-cooked in broth and gravy, it turns out incredibly tender. Paired with creamy mashed potatoes, it’s the kind of dinner that feels nostalgic without being heavy or complicated.
This is also one of those recipes that makes the house smell amazing all afternoon — which, honestly, does half the work of convincing everyone dinner is going to be good. It’s cozy, reliable, and exactly the kind of meal I come back to during busy seasons when I need dinner to just be done.
If you’re craving comfort food that fits into real life — this one deserves a spot in your rotation.

Helpful Tips for Success
Chicken breast works well here because the gravy keeps it moist. Avoid overcooking once the gravy is thickened.
Season lightly at the start and adjust at the end — the gravy concentrates as it thickens.
If your gravy isn’t thick enough, mix 1 teaspoon flour or cornstarch with cold water and stir it in, then let it simmer a few more minutes.
For extra smooth gravy, stir well after shredding the chicken so it fully absorbs the sauce.
Warm your milk before adding it to the mashed potatoes for the creamiest texture.
Using a Multi-Cooker (Highly Recommended)
This recipe works beautifully in a multi-cooker and is even faster on busy nights.
Use the Sauté function to cook the butter, onion, and garlic directly in the pot.
Add the chicken, broth, salt, and pepper.
Cook on Slow Cook (High) for 3–4 hours or Slow Cook (Low) for 6–7 hours.
Switch back to Sauté to thicken the gravy once the slurry is added.
Shred the chicken right in the pot and serve over mashed potatoes.
I link the multi-cooker I use in the post — it makes one-pot comfort meals like this so much easier.
Storage & Meal Prep Tips
Refrigerator: Store chicken and gravy separately from mashed potatoes for up to 4 days.
Reheat: Warm gently on the stovetop or in the microwave, adding a splash of broth or milk if needed.
Meal Prep Friendly: This makes a great comfort-style lunch that reheats well without drying out.

Crockpot Chicken & Gravy Over Mashed Potatoes
Ingredients
- Chicken & Gravy
- 2- 21/2 lbs boneless skinless chicken breasts skinless chicken breasts
- 2 cups chicken broth
- 2 tablespoons butter
- 1 medium onion diced
- 3 cloves garlic minced
- 2 tablespoons all-purpose flour or cornstarch
- Salt to taste
- Black pepper to taste
Mashed Potatoes:
- 2 lbs Yukon gold or russet potatoes peeled and cubed
- 4 tablespoons butter
- ½–¾ cup milk 2% or whole
- Salt and pepper to taste
Let's Make It
- I like to use my multi cooker (linked above), but if you don't have one, use a skillet over medium heat, melt the butter. Add the diced onion and cook for 3–4 minutes until soft and translucent. Stir in the garlic and cook for 30 seconds until fragrant.
- Place the chicken breasts in the bottom of the crockpot. Season lightly with salt and pepper. Spread the sautéed onion and garlic over the chicken, then pour in the chicken broth.
- LOW: 6–7 hours or HIGH: 3–4 hours
- The chicken should be very tender and easy to shred.
- Thicken the gravy: In a small bowl, whisk together the flour (or cornstarch) with 2–3 tablespoons of cold water until smooth. Stir this slurry into the crockpot. Cover and cook on HIGH for 15–25 minutes, until the gravy thickens.
- Shred the chicken directly in the crockpot using two forks and stir to coat it in the gravy.
Mashed Potatoes
- Add the cubed potatoes to a large pot and cover with cold salted water.
- Bring to a boil and cook for 12–15 minutes, until fork-tender.
- Drain and mash with butter, milk, and salt until smooth and creamy.
