Chipotle Lime Chicken Bowls

As part of  my Meal Prep in 1 hour Series, you can prepare this meal along with 1 other meal in this series and have meal prep done in about an hour, give or take!

Why Chipotle Lime Chicken Bowls are great for Meal Prep:

Let me be honest, these are great for an easy and healthy dinner too, but I love these for meal prep because the chicken thighs are so easy to make in bulk and the bowls are a well balance meal for anyone who is trying to maintain a healthy lifestyle and it’s totally customizable to meet your macros, if you track them!

The chicken thighs have sooooo much flavor and it’s a recipe you can use for just about anything- tacos, salads! The pineapple salsa though, just makes this meal taste like summer- it’s so fresh and light! 

I also really love this dish for Meal Prep because the veggies are raw, which means, less cooking! The bowls can be reheated or eaten cold. I usually just reheat the whole thing and i don’t mind that the veggies are slightly cooked after being reheated- personal preference, though!

What you need to make these bowls

like I said, these bowls are totally customizable! You can add any combination of veggies, rice, or salsa you like!

Here is what i love in mine:

  • Brown rice- to save time, I usually just by the frozen premade rice from trader joes. It is a little more costly, but i feel like it saves me time and dishes, so to me, that’s worth it! You can do white rice, or even cauliflower rice for keto or any grain free nutrition plan. I did add cilanto and lime juice into my rice, this is optional!
  • Shredded red cabbage- I just buy a whole head of cabbage and shred it myself, but you can also buy a bag of coleslaw mix to save time!
  • Shredded carrots
  • Radishes
  • Pineapple- you can do fresh or canned. I normally would always suggest fresh, however, I have completly fallen in love with the brand Golden Farms (found at walmart), it taste so fresh, no added sugar and for the price, it’s just about the same as buying a fresh pineapple. It’s also saving you time in the kitchen, totally up to you though!
  • cilantro
  • jalapeno
  • red onion
  • chicken thighs- boneless/skinless are best, but if you don’t care for thighs, just use breast!
  • chipotle in adobo sauce or chipotle peppers- found right next to the canned green chillies and salsa at the grocery store
  • lime zest/juice
  • minced garlic
  • paprika
  • salt
  • avocado/olive oil

Let's Make It!

There is not much prep with this meal beacuse the veggies are raw, but the most important thing to do here is, marinate the chicken thighs for as long as possible, at least 30 minutes! This is something I usually do in the morning and let them marinate when I do my meal prep during my kids nap time.

  • In a large bowl stir together all of the ingredients for the chicken- add in the thighs, toss to make sure they are coated with the marinade, cover and let them marinate for at least 30 minutes – a couple hours in the refrigerator
  • Preheat the oven to 425℉
  • Lay the chicken thighs flat on a baking pan and roast for 30 minutes or until the chicken reaches an internal temperature of 165℉
  • While the chicken is cooking, cook your rice + chop your veggies
  • Make the pineapple salsa by chopping up the pineapple and adding in the cilantro, jalapeno + red onion

    ***you can use fresh, but I really love the Golden Farms Pineapple- it taste so fresh and has no added sugar! I found it at walmart for a great price! (see the picture above)

  • When the chicken is done, chop into strips and assemble your containers with:

    – 1/2 cup rice

    – 1 cup cabbage

    – 1/2 cup carrots

    – 1/2 cup radishes

    – 4 oz of chicken

    – 1/3 cup of salsa

You might have chicken leftover, you can use it for just about anything- salads, tacos, nachos and so much more!

These bowls are so customizable- feel free to swap out veggies, rice and salsa for whatever you love!

Tips for this Meal Prep:

Like i said, make sure you marinate this chicken ahead of time so that it’s more flavorful- 30 minutes to a couple of hours!

You always want to start each meal prep by cooking the main protein first because it takes the longest. 

While the chicken is cooking, chop the veggies, cook the rice, make the salsa and prepare the baked oatmeal so that it’s ready to go into the oven as soon as the chicken is done!

As the chicken cools down, assemble the bowls with rice, veggies and salsa. Chop the chicken and add it to the bowls. 

Clean up after you put the bowls away and wait for the oats to cool down and then throw the lids on and your’e done!

Chipotle Lime Chicken Bowls

These Chipotle Lime Chicken Bowls with fresh veggies and pineapple salsa are zesty, full of flavor and perfect for meal prep!

Ingredients
  

  • 2 ½ lbs chicken thighs boneless/skinless
  • 2 tbsp chipotle in adobo sauce/chipotle peppers
  • 1 tsp lime zest
  • 1 tbsp lime juice
  • 1 tsp minced garlic
  • ½ tsp salt
  • ½ tsp paprika
  • cup chopped cilantro
  • 2 tbsp olive/avocado oil

Pineapple Salsa

  • 14 oz can of pineapple or you can use fresh- about 1 ½ cups
  • cup chopped cilantro
  • 1 chopped jalapeno
  • cup red onion

Base of the Bowls:

  • 4 ½ cups cooked brown rice (I add cilantro and lime juice to mine) ½ cup per bowl
  • 5 cups red cabbge/coleslaw mix 1 cup per bowl
  • 2 ½ cups shredded carrots ½ cup per bowl
  • 2 ½ cups sliced radishes ½ cup per bowl

Let's Make It
