Chipotle Beef + Avocado Bowls
Bursting with so much flavor- these Chipotle Beef + Avocado Bowls are incredibly simple, yet one of my favorite Meal Prep recipes!

Meal Prep in 1 Hour
As part of my Meal Prep in 1 Hour Series, you can prep any two meals from this series in about an hour- give or take!
Meal Prep does not need to be overcomplicated or boring! My goal is to always have fun in the kitchen and see what I can come up with each week!
I hope this series helps you feel more confident in the kitchen and helps you fall in love with preparing your food for the week, not dread it!
Ingredients
This meal is incredibly simple, but the way the flavors all come together is unreal! This is one meal i could eat over and over again!
- Ground Meat-Â I did bison for this, it’s lean like turkey with the flavor of beef. You can do ground beef, turkey or even chicken
- bell peppers
- cauliflower rice-Â I always do frozen, but you do you
- lime juice
- white or brown rice-Â I love the combination of white rice and the cauliflower rice for this, but brown is great, too!
- chipotle in adobo sauce/chipotle peppers-Â See below
- paprika
- garlic powder
- onion powder
- cumin powder
- cilantro
- red onion
Let's Make it!
This is a great meal to make when you are in a hurry because there isn’t much chopping/prep and the protein cooks up so fast + there is very little clean up!
- Over medium high heat, cook down ground meat, add in the seasonings + chipotle peppers
- When the beef is almost done cooking , push it all to the side and add in the bell peppers, cook until tender and the beef is no longer pink or the turkey/chicken has reached an internal temperature of 165°
- Slice the Avocados down the middle, leaving the pit in. This will keep them from turning brown. Be careful! The Pit is hard, but with a sharp knife, you can do it!
- In a large bowl mix together the cooked rice, cauliflower rice + lime juice
Assemble each meal prep container with-
– 1 cup of the rice mixture
– 4 oz of beef
-1/2 cup of bell peppers
– 1/2 of an avocado
– top with cilantro + red onions
- Store these in the refrigerator for up to 5 days!

Meal Prep TIps!
I have paired this prep with the Tortilla Egg Cups. Both are so simple to make and it’s definetly a very fast prep!
- I always start by chopping all of my veggies first and then clean up my work space!
- Prepping the tortilla cups first so I could throw them into the oven while I prepare the meat for the chioptle beef bowls.
- By the time tortilla cups were done, it was time to assemble the chipotle beef bowls.
- Once the bowls were done and put away, I cleaned up, giving the tortilla cups time to cool down and when they were completely cool, I just threw the lids on and popped them in the fridge!
Chipotle Beef + Avocado Bowls
Ingredients
- 1 lb ground meat of choice I love bison for this recipe, but ground beef, tukey or chicken works, too!
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1½ -2 tbsp chipotle peppers or chipotle in adobo sauce
For the Bowls:
- 2 green bell peppers sliced
- 2 cups cooked cauliflower rice
- 2 cups cooked white or brown rice
- 1 lime juiced
- 2 avocados
- 1/2 cup chopped cilantro
- 1/2 cup chopped red onion
