Meal Prep in 1 Hour
You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!
Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!
I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!
As always, thanks for being here and remember, don’t over complicate the process! Take a deep breath, you got this!
Ingredients
Chicken salad is one of my go-to’s for a busy week, it doesn’t take a ton of effort and you don’t need a ton of ingredients! Eat this Chicken Bacon Ranch Salad in a wrap, with crackers or over a bed of greens!
- chicken breast or rotisserie chicken
- ranch seasoning- kinders is my favorite
- green onions
- bacon
- mayonaise
- salt
- pepper
- spinach
- wraps of choice- I love these ones from La Tortilla Factory, they are low carb, low calorie and high in protein
The Prep:
Not much cooking to do here and you can even simplify it by doing rotisserie chicken, totally up to you!
Place chicken breast in the instant pot with 1 tsp ranch seasoning and 1/2 cup of water. Cook on the meat/stew option for 15 minutes, let it slow release and cool down before chopping it.
*** I like to do this in advance so it has time to cool down
- Once the chicken is completely cool add in the other ingredients, incuding the remaining tbsp of ranch seasoning and stir until everything is mixed all together.
- Give it a taste to see if you want to add anymore mayo or salt.
- Fill each wrap with 3/4 cup of spinach and the chicken salad, fold and then wrap in parchment paper, this helps it to stay wrapped and not tear or fall apart.
- I love serving these wraps with a side of raw veggies + ranch!
- Store in the refrigerator for up to 5 days!
Tips for this Meal Prep
I have paired this Meal Prep with the Avocado Toast in a Bowl, both of these meals can be made in less than an hour!
Here’s a few tips!
- make the chicken ahead of time, it takes less than 5 minutes to put it in the instant pot. This way it’s ready when you are ready to start preparing this meal prep!
- Let the chicken cool down while you chop the potatoes and get them in the oven.
- Then mix together the salad and make the wraps while the potatoes are cooking.
- Put the wraps away and start assembling the avocado toast in a bowl containers while the potatoes are cooling down.
- Always try to clean up in between steps and have a bowl/bag for trash, this is so helpful!
- When the potatoes are cool, put them into the bowls and start cleaning up!
That’s it!
I hope this is easy enough for you, please let me know if you have any questions and watch the video below for reference!
