Meal Prep in 1 Hour!

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!

I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!

Ingredients:

Everyone loves avocado toast, but we don’t always have the time to make it. Switching out the toast for some roasted red potatoes and loading this bowl with all the goodies makes this great for Meal Prep!

  • red potatoes- You can use any potatoes you want for this, but I love the crispiness you get from a red potato.
  • everything but the bagel seasoning- I usually buy the one from Trader Joe’s, but there are many other brands that make this seasoning at your local grocery store.
  • Chicken Sausage- Try to buy nitrate free. I’m loving this one from Gilberts Craft Sausages, found at Walmart!
  • olive oil
  • arugula 
  • cherry tomatoes
  • avocado

 

The Prep

Love this meal because there is not much cooking, just the potatoes and sausage, as always, cooking these on my big sheet baking pan.

  • Pre-heat the oven to 425°
  • Toss the chopped red potatoes together with the everything but the bagel seasoning and olive oil, lay flat on a roasting pan, bake at 425° for 25-25 minutes or until potatoes are browned and crispy.

    ***you may need to spray a tiny bit of cooking spray over the potatoes to make sure the poatoes get crispy. This just helps to make sure the oil is evenly distributed without using a ton of oil.

  • While the poatoes are cooking chop the tomatoes and start assembling your meal prep containers.
  • When the potatoes are completely cool, add 3/4 cup of potatoes into each bowl.
  • Each bowl will have:

    – ½ cup arugula

    – ½ cup cherry tomatoes

    – ¾ cup of potatoes

    – ½ an avocado

    I love adding 2 fried eggs on mine when I am ready to eat it, I’m just not a fan of re-heated fried eggs. Scrambled eggs taste fine re-heated if you don’t have the time to make fresh eggs in the morning! You could even do a hard boiled egg as well!

  • Store these in the refrigerator for up to 5 days!

Tips for this Meal Prep

I have paired this Meal Prep with the Chicken Bacon Ranch Salad Wraps, both of these meals can be made in less than an hour! 

Here’s a few tips!

  • make the chicken ahead of time, it takes less than 5 minutes to put it in the instant pot. This way it’s ready when you are ready to start preparing this meal prep!
  • Let the chicken cool down while you chop the potatoes and get them in the oven.
  • Then mix together the salad and make the wraps while the potatoes are cooking.
  • Put the wraps away and start assembling the avocado toast in a bowl containers while the potatoes are cooling down.
  • Always try to clean up in between steps and have a bowl/bag for trash, this is so helpful!
  • When the potatoes are cool, put them into the bowls and start cleaning up!

Ingredients
  

  • 3 cups chopped red potatoes
  • 2 tbsp everything but the bagel seasoning
  • 1 tbsp olive oil
  • 2 cups arugula ½ cup per bowl
  • 2 cups cherry tomatoes ½ cup per bowl
  • 2 avocados chopped in half down the middle, through the seed
  • 4 oz nitrate free chicken sausage
  • 8 eggs cooked to your prefference- fried, scrambled or hard boiled works!

Let's Make It
 

  • Pre-heat the oven to 425°
  • Toss the chopped red potatoes together with the everything but the bagel seasoning and olive oil, lay flat on a roasting pan, bake at 425° for 25-25 minutes or until potatoes are browned and crispy.

  • Each bowl will have:
    - ½ cup arugula
    - ½ cup cherry tomatoes
    - ¾ cup of potatoes
    - ½ an avocado
