Asian Citrus Chopped Salad
Part of my Meal Prep in 1 Hour Series- this Asian Citrus Chopped Salad is incredibly delicious and so easy to make! It’s tangy, crunchy, light, but filling and customizable! Make this salad along with any other of my Meal Prep in 1 Hour Recipes and you can meal prep two meals in 1 hour!
If meal prep isn’t your thing, this salad is great to bring to any BBQ, get togther, or makes for an easy dinner!
With spring finally here and summer right around the corner, I wanted to lighten things up a bit by adding a few delcious staple salads to our meal prep roatation.
As always. i try using the most healthy and fresh ingredients as possible, but this Salad is so customizable! You can add any variety of lettuce, cabbage and veggies you like or just use whatever you have in the refrigerator!
What you will need for the salad:
- a base: i used shaved brussels sprouts- I used a food processor to get them super thin, but if you don’t have one, you can always buy pre-shredded brussels sprouts or use a knife to shave them.
- if you don’t care for brussels sprouts, i would suggest using chopped romaine and a mixure of green and red cabbage or even a bag of spring mix would be great!
- cooked chicken breast
- red bell peppers
- carrots
- cashew
- cilantro
- green onions
- jalapenos
If you do anything though- make this salad dressing! i could just drink it, it’s so good!
- this Citrus dressing uses fresh, simple ingredients that brings all of the flavors together! and don’t be surprised if i use this on another recipe in the future!
for the Citrus Dressing you will need:
- fresh squeezed orange juice
- orange zest
- olive/avocado oil
- honey
- aminos/soy sauce
- apple cider vinegar
- sesame oil
The Prep:
this salad requires very little prep, other than chopping the veggies!
- I do suggest cooking your chicken in the instant pot an hour or two before you decide to put together the salads. I just season 3 breast with salt, pepper, garlic and cook for 20 minutes, slow relase and then chop it once it is completely cooled.
I love meal prepping salads because there is little to no cooking and you definetly don’t have to heat them up! They are a great grab and go kind of meal! I always make enough for 4-5 days and store them in glass meal prep contianers for optimal freshness! Asian Citrus Chopped Salad
Ingredients
- 4 cups shaved brussels sprouts or any other lettuce/cabbage mixture
- 16-20 oz chopped chicken I cook mine in the insatant pot
- 2 cups sliced red bell peppers
- 1 cup shredded carrots
- 3/4 cup cashews
- chopped cilantro
- sliced green onions
- sliced jalapenos
Citrus Dressing
- 3 tbsp fresh orange juice
- 1 1/2 tbsp olive or avocado oil
- 3 tbsp honey
- 3 tbsp coconut aminos or soy sauce
- 3 tbsp apple cider vinegar sub for rice vinegar and white vinger
- 2 tbsp sesame oil
- 1 tsp orange zest
Let's Make It
- Start by chopping all of the veggies and chickenI cook my chicken in the instant pot by seasoning it with salt, pepper, garlic and cooking it on the meat option for 20 minutes (30 if frozen), let it slow release and cool completely before chopping.
- Using a Food Processor, shave the brussels sprouts or save your self some time and just buy them shaved. If you don't have a food processor, just try to slice them as thin as possible- think colesalw thin.You can use any combination of lettuce you like. I just chose brussles sprouts for this because of the added fiber.
- If using this salad for meal prep layer each container with 1 cup brussles sprouts, 4oz chicken, 1/2 cup bell peppers. 1/4 cup carrots, 1/4 cup cashews, cilantro, green onions and sliced jalapenos
Citrus Dressing
- MIx all of the ingredients in a small bowl or mason jar, stir well and pour into dressing containers
