Air Fryer Cowboy Potatoes

Crispy, buttery and loaded- let me introduce you to your husbands new favortie side dish!

I wanted to do a twist on smashed potatoes in the air fryer to give them that extra crispy crunch and that was how these Air Fryer Cowboy Potatoes  were created.

You guys already know how much I love my Instant Vortex Air fryer, but you can use any air fryer or you can even pop these in the oven!

The Deets:

Ok, pop open a beer or grab a glass of wine, turn on some country music (gangster rap works too) and lets get dinner on the table!

Ingredients:

    • bacon
    • red potatoes: you can use any kind of potato you want, I just love red potatoes for this. If you are using yukon, they won’t get as crispy and if you are using russet, then I would peel them. 
    • pepper
    • salt
    • garlic powder 
    • onion powder
    • paprika
    • Parmesan Cheese: you will want to use plain ole grated Kraft parmesan cheese for this.
    • olive oil
    • butter 
    • cheddar cheese
    • BBQ sauce 
    • jalapenos 
    • green onions

The Prep:

  • Preheat your air fryer and cook your baocn until browned and crispy.
  • Meanwhile chop your potatoes into 1 inch cubes and season with onion powder, pepper, salt, parpika, garlic, oil and parmesan cheese (grated).
  • When the bacon is done, drain most of the grease from the pan and add your potatoes, spreading them out so that there is one layer to allow for faster cooking. Set your bacon aside for now.

    **If you do not have a Vortex and are just using a reglar air fryer follow these same steps, but maybe just add a little bacon grease to your potatoes for flavor- this is totally optional.

  • Roast the potatoes in the air fryer at 400 degrees for about 14-16 minutes.
  • While the potatoes are cooking, melt the butter and chop the bacon, green onions and jalapenos.
  • When the potatoes are fork tender, pull them out and smash them with a fork (picture bellow) and then top them with butter, then the BBQ sauce, then the cheese and jalapenos.
  • Place the potatoes back into the air fryer for another 4-5 minutes or until browned and bubbly.
  • Top the potatoes with the bacon and green onions and serve immediately.

If you do not have an Air fryer and want to use an oven:

Follow all of the same steps above using these variations:

  • fry your bacon in a pan
  • use about a tsp of the bacon grease to flavor your potatoes (optional)
  • Preheat your oven to 425 degrees and roast your potatoes for about 20-25 minutes or until fork tender.

Ingredients
  

  • 6-8 small red potatoes yukon gold will work too
  • 4 slices of bacon
  • 1 tsp onion powder
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1 1/2 tbsp olive oil
  • 1/4 cup or less of parmesan cheese grated
  • 2 tbsp butter melted
  • 1/4 cup BBQ sauce
  • 1/2 cup cheddar cheese shredded
  • 1/2 of a jalapeno sliced
  • 1 green onion chopped

Let's Make It
 

  • Cook your bacon in the air fryer for about 5 minutes or until browned and crispy.
    *** If you are using the Instant Vortex Air fryer, place the pan without the holes underneath the bacon to catch the grease. If you do not have an Instant Vortex Air fryer (or anyother air fryer oven), I would suggest just frying your bacon in a pan.
  • Meanwhile chop your potatoes into 1 inch cubes and season with onion powder, pepper, salt, parpika, garlic, oil and parmesan cheese (grated).
