Instant Pot Mexcian Rice

Ingredients
  

  • 1 1/2 cups jasmine rice
  • 1 1/2 tbsp oil
  • 1 cup low sodium chicken broth
  • 1 15.5oz can of mexican stewed tomatoes
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • pinch of salt

Let’s Make It
 

  • Turn Instant Pot to saute mode and once it's hot, add the rice and oil. Saute for 5 minutes.
  • Hit the cancel button and add the chicken broth, all of the juice from the tomatoes and use your hand to smash up as much of the tomatoes as you want (I used about 3/4 of the tomatoes), then add cumin, onion and salt.
  • Hit the rice button. Once it's done, release the valve and turn the pot off. Enjoy!
    ***Ok, this is very important- I noticed that my older instant pot cooked differently than my new one. My old . one would cook rice in 10 minutes, my new one cookes in 12, but it still wasnt done enough! If you have a newer instant pot, cook the rice for 14 minutes- meanings, hit the rice button twice to cook at max.
