Green Goddess Salad Dressing

Packed with so much flavor, this basil + jalapeno Green Goddess Dressing is so diverse, you’ll want to pour it on everything- including my Green Goddess Pasta Salad (recipe below)!

What is Green Goddess Dressing?

 

Green Goddess Dressing is a creamy, low in fat dressing- loaded with green veggies + fresh herbs! Each bite is so flavorful, it’s addicting! 

 

I love using a cream base of plain non fat greek yogurt. For the herbs, I like to use green onions, basil and jalapeno for a little kick. Feel Free to switch out the herbs and spices for whatever you like- cilantro, parsley, red onion or shallots.

Can Green Goddess Dressing be made vegan?

 

Yes!

 

You can swap out the greek yogurt for coconut or cashew yogurt or even a vegan sour cream!

Ingredients:

 

loaded with all things green- this dressing is so refreshing and flavorful. You can use whatever herbs + spices you have at home to make this dressing your own!

 

  • greek yogurt– sub for coconut or cashew yogurt to make this vegan. I’ve even made this with sour cream before and it was delicious!

  • basil– swap out for cilantro to make this a creamy cilantro dressing

  • jalapeno- I use everything but the stem, but if you don’t like spicy stuff, just take out the seeds or use half of the jalapeno. Jalapenos are definitely more spicy in the summer months, so be aware of that when adding to the dressing.

  • green onions– substitute for shallots or red onions

  • lemon juice

  • olive oil

  • apple cider vinegar 

  • salt

The Prep:

 

You will need a small blender or bullet to blend this, or an emersion blender.

  • rough chop the jalapeno and green onions

  • add everything into a blender and blend for about 30 seconds or until smooth.

  • Store in a glass jar or bowl for up to 10 days!

  • I have used this dressing on just about everything- taco salads, strawberry salads, burritos, burgers, tacos, cobb salad. You name it, I’ve poured it on there!

Equipment

  • small blender or bullet

Ingredients
  

  • 1 cup non fat greek yogurt
  • 3 stems green onions
  • ¼ cup fresh basil- basically a small handful or 4-6 large leaves
  • 2 tbsp lemon juice
  • 1 small jalapeno check to make sure it isn't too spicy. I do add the seeds, up to you though.
  • ¼ cup olive oil
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt

Let's Make It
 

  • Give your onions and jalapeno a rough chop
  • Add all of the ingredents into a small blender or bullet, blend for about 30 seconds or until smooth.
  • Store in a glass jar or bowl for up to 10 days!

Green Goddess Pasta Salad

This high protein pasta is loaded with veggies + a homemade green goddess dressing to really elevate this dish and bring out all of the fresh flavors of spring! Use this recipe for an easy meal prep, quick dinner or even for your next potluck or BBQ.

Servings 6 large servings or 10-12 small servings

Ingredients
  

  • 8 oz dried banza chickpea cavatappi pasta noodles or your favorite kind of pasta
  • 16 oz cooked chicken chopped
  • 12 oz artichoke hearts
  • 1 cup chopped spinach
  • 1 1/2 cups sliced cherry tomatoes
  • 4 oz mozzarella pearls I like to add a little extra
  • fresh chopped basil
  • 1 full batch of my green goddess dressing or 1 1/2 cups of store bought
  • salt + pepper to taste

Let's Make It
 

  • Start by bringing a saucepan full of water to a rolling boil to cook the pasta according to the directions on the box.
  • In the meantime, chop the spinach, tomatoes and make the green goddess dressing.
  • Once the noodles are done, run them under cold water to stop the cooking process.
  • In a large bowl, add the noodles, artichokes, tomatoes, spinach, mozzarella, chicken, salt, pepper and green goddess dressing- toss everything until the dressing and ingredients are evenly distributed.
  • Top with fresh basil and enjoy!
  • This salad can be served immediately or used for meal prep!
