Lemon Berry + Quinoa Protein Bowl

The most delicious bowl of whipped lemon cottage cheese, sweet quinoa + mixed berries- this bowl is loaded with protein and great for Meal Prep!

Meal Prep in 1 Hour

You can use any two of the meals in this series to get your meal prep done in just about and hour, give or take!

Having your breakfast and lunch ready for the week helps you stay on track with your nutriton, saves you time and money! I truly beleive that meal prep does not need to be over complicated, take too much time or be boring!

I always get asked- “do you ever get tired of eating the same thing all week?” and the answer is, no! Not when the food taste good! I give plenty of variety in these preps and keep it simple!

Ingredients:

I’m loving this bowl right now because it’s super simple and doesn’t require much cooking, besides the quinoa. Plus, it’s so refreshing for summer and a good alternative to oatmeal.

If you are not a fan of cottage cheese, you can always switch it out to plain greek yogurt!

  • low fat cottage cheese or plain greek yogurt
  • quinoa
  • lemon juice
  • lemon zest 
  • maple syrup 
  • vanilla extract 
  • frozen mixed berries

The Prep:

You do need  a food processor to whip the cottage cheese, I’ve linked a great one below!

  • Cook your quinoa according to the instructions on the box. Set it aside to cool down completely while you make the whipped cottage cheese.
  • In a food processor, add the cottage cheese, lemon zest, lemon juice, vanilla extract and honey. Blend for 1-2 minutes or until the mixture has a whipped cream cheese texture.
  • Once the quinoa has cooled down, add in the maple syrup and a little extra lemon juice, to taste.
  • In your containers add:

    3/4 cup qunioa

    3/4 cup cottage cheese

    1/2 cup frozen berries

    fresh lemon zest on top

Tips for this Meal Prep

I have paired this salad with the Green Goddess Cobb Salad– both of these meals can be made in less than an hour, but do require a few things to be made ahead of time, like the chicken and pickled onions. 

**If you are pressed for time, you can always use rotisserie chicken or any other premade chicken from the store.

  • start by cooking the chicken in the instant pot, so it has time to cool before adding it into the salads.
  • Cook the quinoa
  • boil the eggs
  • While the eggs and quinoa are cooking, cook some bacon and make the dressing.
  • Blend all of the ingredients for the dressing and add into dressing contianers 
  • While the chicken a quinoa are cooling down, chop the bacon, tomatoes and hard boiled eggs.
  • Next, put together the quinoa bowls 
  • Once the quinoa bowls are put away start making the salads

  • 1 tbsp lemon zest
  • 1 tbsp + 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp honey
  • 3 cups cooked quinoa

  • extra lemon juice and zest
