Lemon Dijon Chicken Marinade
There is nothing cute about raw chicken, i get it, but I promise this Lemon Dijon Chicken Marinade is so good!Â
Give me a big bowl of orzo pasta with artichokes, tomatoes, spinach and this chicken on top. YUM!
I usually make this with chicken breast, but it is really good with chicken thighs, too!
Pro Tips:
- do not marinate your chicken for longer than 3 hours. There is citrus in the marinade so it can give your chicken a weird texture if it marinates for too long.
- Save any leftover chicken for salads- paired with my Lemon Vinaigrette.Â

Tangy lemon and zesty dijon with herbs and spices- makes great leftover chicken salads paired with my Lemon Dijon Dressing!

Ingredients
- 3 large chicken breast cut in half (through the middle) to make 6 thinner breast
- 1 lemon zested and juiced
- 1 tbsp olive oil
- 1 tbsp minced garlic
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1/4 tsp rosemary
- 1/4 tsp pepper
- 1/2 tsp parsley
- 1/4 tsp paprika
Let's Make It
- Slice the chicken in half (through the middle) to make 6 thiner breast. Doing this allows for the chicken to cook faster and helps to avoid drying out the chicken.
- Add all of the ingredients in to a ziplock bag or bowl and mix well. Add the chicken to the bag- giving it a good toss to make sure all the breast are coated well.
- Let the chicken marinate for 1-3 hours.
- Prepare on grill, in the oven, air fryer or crockoot.
- ****Can substitute for chicken thighs!
