A breakfast staple- these BLT breakfast sandwiches are made simple by making sheet pan eggs, layered with bacon, greens, tomato + everything but the bagel seasoning!
½tsp saltonly if yuur EBTB seasoning doesn't have salt in it
Sandwiches:
4slices of bacon
2cupsspring mix/greens
4tomato slices
everything but the bagel seasoning
4english muffinsI love the Glutino brand of gluten free
optional to add avocado or mayo to your sandwich
Let's Make It
Preheat the oven to 375°
In a bowl whisk together the eggs, seasoning, salt, cottage and feta cheese.
In an 8x8 baking dish either lined with parchment paper or sprayed with oil, add in the egg mixture. Bake in the oven on the middle rack for 20-25 minutes.
In the meantime, toast the english muffins and slice the tomatoes.
When the eggs are firm in the middle, take it out to cool down.
Cut the egg into 4x4 squares.
Make each sandwich with with one 4x4 square of egg + one slice of bacon. Add in ½ cup of greens + tomato slices on the side.
To reheat these, take the muffin out of the container and wrap in a paper towel, cook in the microwave for about 1:15. Then add on the toppings.
