Coconut Lime Chicken Marinade

Even before making this recipe, I knew it was going to be a winner. Anything with coconut, lime, grilled pineapple, and avocado immediately feels like summer to me. This Coconut Lime Chicken is the tropical-inspired option from my Protein Prep Trio and gives you something completely different from the Lemon Basil Chicken and Chimichurri Steak.

It’s slightly sweet, bright from the lime, and incredibly juicy thanks to the coconut milk.

The best part?

You can prep everything days ahead of time and simply grill when you’re ready.

Coconut milk adds richness without making the chicken feel heavy.

  • Ideal: Overnight
  • Maximum: 48 hours

Ingredients
  

  • pounds boneless skinless chicken thighs
  • ½ cup light coconut milk
  • Juice of 2 limes
  • Zest of 1 lime
  • 2 cloves garlic minced
  • 2 tablespoons honey
  • 2 tablespoons cilantro
  • 1 teaspoon salt

Let's Make It
 

  • Whisk marinade ingredients together.
  • Add chicken to bag or container.
  • Pour marinade over chicken.
  • Refrigerate:
  • Minimum: 4 hours
  • Best: Overnight
  • Maximum: 2 days
  • Grill until chicken reaches 165°F.
