Whenever I know we’re heading into a busy week filled with practices, errands, and work, I mix up a few marinades on Sunday. It takes less than 30 minutes to prep several proteins, and then every night I can simply cook one and have dinner on the table in no time.

This BBQ Peach Chicken has become one of our family’s favorites because the peach preserves caramelize beautifully while the barbecue sauce creates the most flavorful glaze. Pair it with roasted vegetables, corn, potatoes, or a fresh summer salad, and dinner is done.

Ingredients
  

  • 2 pounds boneless chicken thighs or breasts
  • ½ cup barbecue sauce
  • cup peach preserves
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper

Let's Make It
 

  • Whisk the marinade together and reserve about ¼ cup for brushing over the chicken later.
  • Pour the remaining marinade over the chicken and refrigerate for at least two hours or overnight.
  • When ready to cook, grill over medium heat or bake until the chicken reaches 165 degrees. Brush with the reserved sauce during the last few minutes of cooking for an extra layer of flavor.
