If there’s one meal my entire family gets excited about, it’s steak tacos.
And these Chimichurri Steak Tacos might have been my favorite dinner from this entire protein prep series.
They’re colorful, fresh, loaded with flavor, and feel like something you’d order at a restaurant even though they come together in minutes.
This marinade originally needed a little more punch, so I adjusted it with more garlic, vinegar, oregano, and lime juice. The result is exactly what I wanted—bright, herby, and bold enough to stand up to grilled steak.

Why Chimichurri Makes Such a Great Steak Marinade
Most people think of chimichurri as a finishing sauce.
And while it’s incredible drizzled over grilled steak, it also works beautifully as a marinade.
The vinegar helps tenderize the meat while the herbs, garlic, and olive oil infuse the steak with flavor.
The longer it sits, the better it gets.

How Long Should Steak Marinate?
I recommend:
- Minimum: 4 hours
- Best: Overnight
- Maximum: 48 hours
Because there’s vinegar in the marinade, I wouldn’t push much beyond two days.
My Favorite Way to Serve this steak marinade
I planned on making power bowls.
Then taco night happened.
And honestly, I’m not mad about it.
These steak tacos were incredible.
I loaded warm tortillas with:

The combination of creamy avocado, salty cotija, tangy onions, and flavorful steak was absolutely perfect.

Chimichurri Steak Marinade
Ingredients
- 1½ pounds flank steak or sirloin
- ⅓ cup olive oil
- ⅓ cup parsley
- ¼ cup cilantro
- 4 garlic cloves
- 3 tablespoons red wine vinegar
- Juice of ½ lime
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes
Let's Make It
- Combine marinade ingredients.
- Add steak and marinade to a zip-top bag.
Marinate:
- Minimum: 4 hours
- Best: Overnight
- Maximum: 48 hours
- Grill to desired doneness.
- Allow steak to rest 10 minutes before slicing against the grain.
