Cheeseburger Roll Ups for Easy Back-to-School Lunches
If your kids love cheeseburgers, they’re going to be obsessed with these Cheeseburger Roll Ups. They have all the flavors of a classic cheeseburger wrapped up in a crispy tortilla that’s easy to hold, easy to pack, and even easier to make ahead.

- 1 lb lean ground beef
- 1 tsp onion powder
- 1 tsp kosher salt
- ½ tsp pepper
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce optional
- 1 tbsp butter
- 1 large yellow onion thinly sliced
- 2 cups shredded cheddar cheese
- 8 fajita-size flour tortillas
- Cooking spray or melted butter
Cook the Onions: Heat butter in a large skillet over medium heat.
Add the sliced onions and cook for 12–15 minutes, stirring every few minutes, until they’re soft, golden brown, and caramelized.
Remove from the skillet and set aside.
Cook the Beef: In the same skillet, cook the ground beef until browned.
Drain any excess grease.
Stir in the onion powder, salt, pepper, yellow mustard, and Worcestershire sauce. Cook for another minute.
Assemble
Lay out the tortillas.
Divide the beef evenly between each tortilla.
Top with shredded cheddar cheese.
Add a layer of caramelized onions.
Roll tightly like a taquito.
Bake
Preheat oven to 425°F.
Place roll ups seam-side down on a parchment-lined baking sheet.
Lightly spray with cooking spray or brush with melted butter.
Bake for 12–15 minutes, flipping halfway through, until golden brown and crispy.
Serve warm with burger sauce for dipping.
