Mini High-Protein Bagel Breakfast Sandwiches
These mini high-protein bagel breakfast sandwiches are the perfect make-ahead freezer breakfast for busy school mornings. Made with protein bagels, eggs, cottage cheese, bacon, and cheddar cheese, they’re easy to prep ahead and reheat in minutes.

Egg Filling 16 large eggs ¾ cup cottage cheese 2-3 teaspoons everything bagel seasoning 1½ cups shredded sharp cheddar cheese 8 slices cooked bacon chopped Sandwiches 16 Dave’s Killer Bread Everything Mini Bagels 16 slices cheddar cheese
Preheat oven to 350°F.
Line a 9x13 baking dish with parchment paper and spray lightly.
Whisk together eggs, cottage cheese, and everything bagel seasoning.
Pour into the prepared pan.
Sprinkle evenly with cheddar cheese and chopped bacon.
Bake for 22–28 minutes until fully set.
Cool for 10 minutes.
Cut egg rounds using a biscuit cutter.
Toast bagels.
Assemble sandwiches with an egg round and slice of cheddar cheese.
Cool completely.
Wrap individually and freeze.
Freezing + Reheating Freeze for up to 3 months.
Reheat in the microwave for 1½–2 minutes from frozen.
Toasting the bagels before assembling gives the best texture after reheating.
