This Hot Honey Walnut-Crusted Salmon with Summer Peach Salsa is one of those recipes that just screams summer. The salmon is perfectly flaky with a golden, crispy California walnut crust, topped with a fresh peach, tomato and corn salsa and finished with a drizzle of hot honey. It’s colorful, fresh and looks a little fancy, but is actually such an easy weeknight dinner.
I make a lot of salmon in our house, so when I come up with a version that feels completely different from our usual rotation, I get excited about it. And this one might be one of my favorites I’ve made all summer.
The California walnut crust is what really makes it. The walnuts get pulsed and mixed with crispy panko, Parmesan, lemon zest and seasonings before being pressed onto the salmon. Once it bakes, you get this crispy, golden topping while the salmon underneath stays tender and flaky.
Then there’s the salsa. Fresh peaches, juicy tomatoes, sweet corn, jalapeño and basil make it so fresh and colorful. Add a drizzle of hot honey at the end and you get a little bit of everything in one bite—savory, sweet, spicy, fresh and crunchy.
And the best part? It looks like a dinner you spent way more time on than you actually did.

I keep my California walnuts right in the fridge alongside my other fresh produce to help maintain their freshness. It also makes it really easy to grab them when I’m cooking because I’ve been using walnuts in so many more savory recipes lately.
For this recipe, pulsing the walnuts into the crispy topping adds so much flavor and texture without making the recipe complicated.
The Summer Peach Salsa
Do not skip the salsa!
I wanted something really fresh and colorful to balance the crispy walnut-crusted salmon, and this combination ended up being so good.
Fresh peaches give it sweetness, tomatoes add a little acidity, and the fresh corn adds the best little crunch. Jalapeño brings some heat without overpowering everything, while lime and basil keep it bright and fresh.
And yes—you can use the corn raw! When sweet corn is in season, I cut the kernels straight from the cob and add them right into the salsa. They’re crisp, juicy and perfect for this.
If you don’t like much heat, remove the seeds and membrane from the jalapeño or simply use less.

The Secret to a Crispy Walnut Crust
The biggest thing is making sure you don’t process your walnuts too much. You want them finely chopped, not turned into walnut butter.
Pulse them in short bursts in the food processor until they’re about the same general size as the panko breadcrumbs. Keeping a little texture is what gives you that gorgeous crispy topping.
The Dijon and honey mixture also does double duty here. It adds flavor while helping the walnut mixture stick to the salmon.
When adding the topping, don’t be shy! Press a generous layer onto each salmon fillet. That’s how you get plenty of that crispy walnut crust in every bite.
How to Know When Salmon Is Done
Salmon cooks pretty quickly, which is one of the reasons I love it for weeknight dinners.
The exact cooking time will depend on the thickness of your fillets, so start checking it toward the lower end of the cooking time. The salmon should flake easily and reach an internal temperature of 145°F.
You don’t want to leave it in the oven longer than necessary because the goal is a crispy, golden topping with really tender salmon underneath.
Can I Make This Ahead?
The peach salsa can be prepared a little ahead of time, but I think it’s best when it’s fresh. You can chop everything a few hours before dinner and store it covered in the refrigerator.
I would wait to add the salt until closer to serving because salt will start pulling moisture from the peaches and tomatoes.
You can also pulse the walnuts and combine the dry crust ingredients ahead of time. Store the mixture in an airtight container in the refrigerator until you’re ready to make dinner.
I recommend coating and baking the salmon right before serving so that walnut topping stays nice and crispy.
What to Serve with Walnut-Crusted Salmon
Honestly, because you already have the peach salsa on top, you don’t need much.
For an easy weeknight dinner, I’d serve it with coconut rice, roasted baby potatoes or some crusty bread and call it good.
If you’re serving this for friends, add a simple green vegetable like grilled asparagus, broccolini or green beans. It would also be so good with an herby orzo on the side.
Whatever you serve with it, make sure you get some of that peach salsa and crispy walnut topping in every bite.
Substitutions and Variations
No fresh corn? Frozen corn works too—just thaw it and pat it dry before adding it to the salsa.
If peaches aren’t quite in season, nectarines would be an easy swap.
For less heat, leave out the jalapeño or replace it with a little finely diced bell pepper.
You can also adjust the amount of hot honey depending on your family. I love that little sweet-and-spicy finish, but regular honey works if you’re serving someone who doesn’t like spice.
And while I love fresh basil here, cilantro would completely change the flavor in a really good way.

Pat the salmon dry before adding the Dijon mixture. This helps everything adhere better.
Don’t over-process the walnuts. Texture is your friend here!
Really press the walnut-panko mixture onto the salmon rather than loosely sprinkling it over the top.
Use ripe but still slightly firm peaches. Super-soft peaches can make the salsa watery.
Wait until the very end to drizzle on your hot honey. You want that glossy sweet heat right over the crispy crust.
And make extra salsa. Trust me. It’s really good scooped up with tortilla chips while you’re finishing dinner.

Ingredients
Summer Peach Salsa
- 2 ripe but firm peaches diced
- 1 cup cherry tomatoes quartered
- 1 cup fresh corn kernels cut from the cob
- 1/4 cup finely diced red onion
- 1 small jalapeño seeded and finely diced
- 1/4 cup chopped fresh basil
- Juice of 1 lime
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon kosher salt
Walnut-Crusted Salmon
- 4 6-ounce salmon fillets
- 1 cup California walnuts
- 1/2 cup panko breadcrumbs
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Zest of 1 lemon
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 2 tablespoons hot honey for finishing
- Fresh basil for garnish
- Lemon wedges for serving
Let's Make It
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Make the peach salsa. Add the diced peaches, tomatoes, corn, red onion, jalapeño and basil to a medium bowl. Add the lime juice, olive oil and salt and gently toss until combined. Set aside.
- Add the California walnuts to a food processor and pulse in short bursts until finely chopped. Be careful not to over-process them into a paste.
- Add the chopped walnuts to a shallow bowl with the panko, Parmesan, garlic powder, smoked paprika, kosher salt, black pepper and lemon zest. Stir to combine.
- Pat the salmon fillets dry and arrange them on the prepared baking sheet.
- In a small bowl, stir together the Dijon mustard and honey. Brush the mixture evenly over the top of each salmon fillet.
- Generously press the walnut-panko mixture onto the top of each piece of salmon, making sure it adheres well. Lightly drizzle the crust with olive oil.
- Bake for 12–15 minutes, depending on the thickness of your salmon, until the topping is golden and crispy and the salmon reaches an internal temperature of 145°F.
- Transfer the salmon to plates or a serving platter. Spoon the summer peach salsa over and around the salmon.
- Finish with a drizzle of hot honey, fresh basil and lemon wedges. Serve immediately.
Notes
- Fresh sweet corn can be used raw in the salsa—there’s no need to cook it first.
- For the crispiest topping, don’t pulse the walnuts too finely. You want small pieces that will toast as the salmon bakes.
- If your salmon fillets are especially thick, they may need a few additional minutes in the oven.
- For a milder recipe, omit the jalapeño and swap the hot honey for regular honey.
- Store leftover salmon and salsa separately in airtight containers in the refrigerator. Reheat the salmon in the oven or air fryer when possible to help bring back some of the crunch.
