If I had to choose one protein prep recipe that gets made over and over in our house, it would be this Chipotle Lime Chicken!
It’s smoky, slightly spicy, packed with fresh lime flavor, and works for almost everything. We use it for sheet pan fajitas, burrito bowls, tacos, salads, wraps, quesadillas, nachos, and meal prep lunches.
That’s why I love protein prepping instead of making the same meal over and over. One marinade gives you endless dinner possibilities throughout the week.
I usually make this on Sunday along with a couple other marinades, and by the time dinner rolls around, all I have to do is cook the chicken and add whatever sides we’re craving that night.

Chipotle Lime Chicken
Ingredients
- 2 pounds boneless skinless chicken thighs
- 3 tablespoons taco seasoning
- 2-3 tablespoons chipotle peppers in adobo
- 2 tablespoons honey
- 1 tablespoon coconut aminos
- Juice and zest of 1 lime
- Salt to taste
Let's Make It
- Whisk together all of the marinade ingredients.
- Add the chicken and coat well.
- Marinate for at least two hours or overnight.
- Grill, bake, or cook on a sheet pan with peppers and onions until the chicken reaches 165 degrees.
- Slice and use throughout the week however you like.
