Roasted Tomato Burrata Appetizer with Crispy Crostini

There are just some recipes that look like you spent hours making them, but secretly come together with just a handful of simple ingredients. This roasted tomato burrata appetizer is exactly that.

Roasting the tomatoes completely transforms them. They become sweet, jammy, and incredibly flavorful while the garlic infuses the olive oil with so much flavor. Pair that with creamy burrata, fresh basil, crispy homemade crostini, and you have one of those appetizers everyone gathers around before dinner.

This is the kind of recipe I make all summer long when tomatoes are at their peak. It’s beautiful enough for entertaining but easy enough to throw together on a random weeknight when I want something a little special.

If you’re serving friends on the patio, hosting a dinner party, or bringing something to share, this appetizer never lasts long.

Frequently Asked Questions

Can I make this ahead of time?

Yes! Roast the tomatoes up to two days ahead. Reheat them just before assembling with fresh burrata.

What is burrata?

Burrata is a fresh Italian cheese with a mozzarella shell and a rich, creamy center. It’s incredibly soft and perfect for spreading onto bread.

Can I use grape tomatoes?

Absolutely! Cherry or grape tomatoes both work well.

Do I have to use balsamic glaze?

Not at all. I love it both ways. The roasted tomatoes are flavorful enough on their own, but the glaze adds a delicious sweet finish.

Tips for the best burrata appetizer

  • Use ripe, sweet cherry tomatoes for the best flavor.
  • Let the burrata sit at room temperature for about 20 minutes before serving so it’s extra creamy.
  • Don’t skip the fresh basil—it brightens the whole dish.
  • Spoon some of the roasted garlic oil over the burrata before serving. It adds so much flavor.
  • Serve while the tomatoes are still warm for the best contrast with the cool, creamy burrata.
