Chipotle Lime Chicken

If I had to choose one protein prep recipe that gets made over and over in our house, it would be this Chipotle Lime Chicken!

Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons taco seasoning
  • 2-3 tablespoons chipotle peppers in adobo
  • 2 tablespoons honey
  • 1 tablespoon coconut aminos
  • Juice and zest of 1 lime
  • Salt to taste

Let's Make It
 

  • Whisk together all of the marinade ingredients.
  • Add the chicken and coat well.
  • Marinate for at least two hours or overnight.
  • Grill, bake, or cook on a sheet pan with peppers and onions until the chicken reaches 165 degrees.
  • Slice and use throughout the week however you like.
