Chipotle Lime Chicken
If I had to choose one protein prep recipe that gets made over and over in our house, it would be this Chipotle Lime Chicken!
Course Main Course
Cuisine marinade
- 2 pounds boneless skinless chicken thighs
- 3 tablespoons taco seasoning
- 2-3 tablespoons chipotle peppers in adobo
- 2 tablespoons honey
- 1 tablespoon coconut aminos
- Juice and zest of 1 lime
- Salt to taste
Whisk together all of the marinade ingredients.
Add the chicken and coat well.
Marinate for at least two hours or overnight.
Grill, bake, or cook on a sheet pan with peppers and onions until the chicken reaches 165 degrees.
Slice and use throughout the week however you like.
