One of my favorite meal prep tricks isn’t prepping entire meals—it’s prepping proteins, including this chicken.
Every Sunday I mix up a few different marinades so that dinner during the week is almost effortless. It keeps us from getting bored because I can turn the same protein into completely different meals.
This BBQ Peach Chicken is one of those recipes I make every summer. The chicken is sweet, smoky, and incredibly juicy thanks to the peach preserves and barbecue sauce. Instead of serving it with traditional barbecue sides, I love slicing it over a big chopped salad loaded with fresh summer ingredients.
The combination of grilled peaches, creamy avocado, smoky elote topping, crisp romaine, and ranch dressing is absolutely incredible.

BBQ Peach Chicken Salad Bowl
Ingredients
- 2 pounds boneless chicken thighs or breasts I used my BBQ Peach Chicken Marinade on them
Salad
- Chopped romaine
- Sliced grilled peaches
- Avocado
Elote Topping
- Fire roasted corn
- Jalapeño
- Red bell pepper
- Cotija cheese
- Chopped cilantro
- Red onion
- Lime juice
- Mayo
- Serve with ranch dressing.
Let's Make It
- Grill marinated chicken until cooked through.
- While the chicken rests, mix together the elote topping ingredients.
- Fill bowls with chopped romaine, grilled chicken, sliced peaches, avocado, and generous spoonfuls of the elote mixture.
- Drizzle with ranch dressing and serve immediately.
