These easy sheet pan cottage cheese breakfast squares are packed with eggs, bacon and cheese for a high-protein breakfast that’s perfect for meal prep, busy mornings or breakfast wraps.

Ingredients
  

  • 8 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon chopped
  • 2-3 green onions thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper

Let's Make It
 

  • Preheat the oven to 400°F. Line a small rimmed sheet pan or baking pan with parchment paper, making sure the parchment comes slightly up the sides.
  • Add the eggs to a large bowl and whisk until combined.
  • Stir in the cottage cheese, sharp cheddar, chopped bacon, green onions, garlic powder, salt and pepper. The mixture should be fairly thick and chunky rather than completely smooth.
  • Pour the mixture onto the prepared pan and gently spread it into an even layer.
  • Bake at 400°F for about 15–20 minutes, or until the center is set and the edges are lightly golden. Baking time will vary depending on the size of your pan and the thickness of the egg mixture.
  • Let cool for about 5 minutes before lifting from the pan and cutting into 8 squares.
  • Serve immediately or allow the squares to cool completely before storing for meal prep.
