If you love the idea of egg bites for meal prep but don’t necessarily love making individual egg bites, these breakfast squares are about to make your mornings so much easier.
I’ve made plenty of egg bites over the years, and while they’re great, sometimes I just want something even simpler. No filling individual muffin cups, no water bath, no trying to get that perfect Starbucks-style texture. I wanted something I could mix together in one bowl, spread onto a sheet pan, bake and slice.
And honestly, I think I might like these even better.
These Sheet Pan Cottage Cheese Breakfast Squares are thicker and a little more substantial than regular baked eggs. The cottage cheese adds protein while also giving the egg mixture a really good texture, and sharp cheddar, bacon and green onions give them plenty of flavor without needing a long list of ingredients.
They’re also one of those meal-prep recipes that actually makes sense for our family. I can make a batch, cut it into squares and have breakfast ready to grab from the fridge for the next few days. My kids love them as-is, but you can also warm one up and tuck it into a tortilla for a super easy little breakfast burrito.
Why I Love These More Than Egg Bites
The biggest reason? They’re just easier.
Everything goes into one bowl and then onto one parchment-lined pan. Instead of portioning out a dozen little egg bites, you bake one big batch and cut it into whatever size squares you want.
I also really like the texture. Because of the cottage cheese and cheddar, the mixture is intentionally thicker than a traditional sheet pan egg recipe. You still get the eggs, but the finished squares don’t feel like you’re eating a giant chunk of plain scrambled egg.
They’re cheesy, savory, filling and high in protein — exactly what I want when I’m trying to prep breakfasts that will actually keep us full through the morning.
A High-Protein Breakfast That Works for the Whole Family
One thing I’m always looking for with breakfast meal prep is something that both the kids and I will eat.
I don’t want to make a separate “high-protein” breakfast for myself and then something completely different for everyone else. These are simple enough that my kids love them, but they still give us a really good amount of protein from the eggs, cottage cheese, cheddar and bacon.
You can also easily customize half of the pan if your kids like things a little more basic. Leave green onions off one section, add extra cheese to another, or swap the bacon for another breakfast meat.

The Cottage Cheese Is the Secret
If cottage cheese in eggs sounds strange, trust me on this one.
It adds creaminess and extra protein, but once everything is baked together, it doesn’t taste like you’re eating cottage cheese. I actually like that I’m not blending it for this recipe because it helps create that thicker, heartier texture I was going for.
This is not supposed to be a super thin sheet of eggs. The mixture should look fairly thick when you spread it onto the pan.
Perfect for Sunday Meal Prep
This is exactly the type of recipe I like to make when I have a few minutes to prep for the school week.
Bake one pan, let it cool, slice it into squares and store them in an airtight container in the refrigerator. In the morning, everyone can grab a square and warm it up.
For an even more filling breakfast, I’ll add fruit, toast or avocado on the side.
And one of my favorite ways to use these is inside a tortilla. Warm up a square, add it to a small tortilla and you have an almost instant breakfast burrito. You could add avocado, salsa or a little hot sauce, too.
How to Store and Reheat
Store the cooled breakfast squares in an airtight container in the refrigerator for up to 4 days.
To reheat, microwave an individual square for about 30–60 seconds, or until warmed through. I like reheating them just until hot so the eggs stay soft instead of becoming rubbery.
You can also freeze them. Wrap the individual squares or separate them with parchment paper before placing them in a freezer-safe container. Thaw overnight in the refrigerator before reheating for the best texture.
Ways to Serve Them
These are good enough to eat completely on their own, especially when you need something fast on a school morning. But there are so many easy ways to turn one square into a full breakfast.
Try serving them with fresh berries or fruit, avocado, sourdough toast, salsa or hot sauce. Or place a warm square inside a tortilla with avocado and salsa for the easiest breakfast burrito ever.
You could even put one between an English muffin or mini bagel for a quick breakfast sandwich.
Easy Variations
Once you have the basic egg and cottage cheese mixture, this is such an easy recipe to change up depending on what you have in the fridge.
Try swapping the bacon for cooked breakfast sausage or diced ham. You could add chopped spinach, sautéed peppers, diced jalapeños or another cheese. Pepper jack would be really good if you want a little kick.
Just be careful with vegetables that release a lot of water. Cooking them first will help keep the breakfast squares from becoming watery.

Not much! Once it’s baked with the eggs, cheddar, bacon and seasonings, the cottage cheese mostly adds creaminess, texture and protein.
Do I need to blend the cottage cheese?
No. I actually prefer not blending it for this recipe because I want the mixture to be thicker and more substantial than traditional baked eggs or egg bites.
Can I make these without bacon?
Absolutely. Leave it out or substitute cooked turkey sausage, breakfast sausage or diced ham.

Sheet Pan Cottage Cheese Breakfast Squares
Ingredients
- 8 large eggs
- 1 cup cottage cheese
- 1/2 cup shredded sharp cheddar cheese
- 4 slices cooked bacon chopped
- 2-3 green onions thinly sliced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper
Let's Make It
- Preheat the oven to 400°F. Line a small rimmed sheet pan or baking pan with parchment paper, making sure the parchment comes slightly up the sides.
- Add the eggs to a large bowl and whisk until combined.
- Stir in the cottage cheese, sharp cheddar, chopped bacon, green onions, garlic powder, salt and pepper. The mixture should be fairly thick and chunky rather than completely smooth.
- Pour the mixture onto the prepared pan and gently spread it into an even layer.
- Bake at 400°F for about 15–20 minutes, or until the center is set and the edges are lightly golden. Baking time will vary depending on the size of your pan and the thickness of the egg mixture.
- Let cool for about 5 minutes before lifting from the pan and cutting into 8 squares.
- Serve immediately or allow the squares to cool completely before storing for meal prep.
