Sheet Pan Chipotle Chicken Fajitas
These fajitas are exactly why I love protein prepping. I love serving these family style right on the sheet pan!

Cuisine sheet pan
- 2 pounds boneless skinless chicken thighs I used my Chipotle Lime Chicken Marinade on them
Fajitas
- 3 bell peppers sliced
- 1 large onion sliced
- Olive oil
- Warm tortillas
Toppings
- Guacamole
- Salsa
- Sour cream or Greek yogurt
- Cotija cheese
- Cilantro
- Lime wedges
- Pickled onions
Preheat the oven to 425°F with a large sheet pan inside.
Slice the Chipotle Lime marinated chicken into thin strips.
Toss the chicken, peppers, and onions with a little olive oil.
Carefully spread everything onto the hot sheet pan.
Roast for 20–25 minutes, stirring once halfway through, until the chicken is cooked through and the vegetables are caramelized.
Serve directly from the sheet pan with warm tortillas and your favorite toppings.
