These fajitas are exactly why I love protein prepping.
The chicken is already marinated, so when dinner rolls around all I have to do is slice it thin, toss it with peppers and onions, and throw everything onto a screaming hot sheet pan.
One little trick completely changes the recipe: I actually place my sheet pan in the oven while it preheats.
When you add the chicken and vegetables to the hot pan, you immediately hear that sizzle. It helps everything caramelize instead of steaming and gives you those delicious roasted edges you’d normally only get at a restaurant.
I love serving these family style right on the sheet pan with warm tortillas and all of our favorite toppings.
Everyone builds their own fajitas, which always makes dinner a little more fun.

Sheet Pan Chipotle Chicken Fajitas
Ingredients
- 2 pounds boneless skinless chicken thighs I used my Chipotle Lime Chicken Marinade on them
Fajitas
- 3 bell peppers sliced
- 1 large onion sliced
- Olive oil
- Warm tortillas
Toppings
- Guacamole
- Salsa
- Sour cream or Greek yogurt
- Cotija cheese
- Cilantro
- Lime wedges
- Pickled onions
Let's Make It
- Preheat the oven to 425°F with a large sheet pan inside.
- Slice the Chipotle Lime marinated chicken into thin strips.
- Toss the chicken, peppers, and onions with a little olive oil.
- Carefully spread everything onto the hot sheet pan.
- Roast for 20–25 minutes, stirring once halfway through, until the chicken is cooked through and the vegetables are caramelized.
- Serve directly from the sheet pan with warm tortillas and your favorite toppings.
