Pumpkin SZN is here! These melt in your mouth Pumpkin White Chocolate Energy Bites are a great way to get your pumpkin fix without sacrificing your nutrition goals!

1/2cup Lilly's White Chocolate Chips
1tspcoconut oil
Let's Make It
In a large bowl mix together the pumpkin puree + maple syrup.
In another bowl mix together the oats, pb fit, pumpkin spice, chia seeds + flax meal.
Add the dry ingredients into the wet and fold until combined- roll into 1 1/2 inch balls (should get 16)
You can add in the chocolate chips at this point or you can melt them like I did to drizzle on top!
Add the chocolate chips into a metal bowl with 1 tsp coconut oil and melt in the microwave using 20 second intervals until melted- stirring in between each time.
Drizzle the melted chocolate over the energy bites and freeze for 30 minutes to harden the chocolate before adding into a bag/container to store in the freezer/fridge. I like to store mine in the freezer so they last longer!
