Ingredients
  

For the Hot Honey Salmon

  • pounds salmon skin removed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 3 tablespoons hot honey divided

For the Peach Salsa

  • 2 ripe peaches diced
  • ¼ cup finely diced red onion
  • 1 small jalapeño seeded and minced
  • ¼ cup chopped cilantro
  • Juice of 1 lime
  • ¼ teaspoon kosher salt

For Serving

  • 2 cups cooked jasmine rice or coconut rice
  • 1 avocado sliced
  • 1 cucumber diced
  • Extra hot honey
  • Lime wedges
  • Optional: sliced green onions

Let's Make It
 

  • In a bowl, combine peaches, red onion, jalapeño, cilantro, lime juice, and salt. Stir and set aside.
  • Preheat oven to 425°F or air fryer to 400°F.
  • Toss salmon with olive oil, paprika, garlic powder, salt, pepper, and 2 tablespoons hot honey.
  • Arrange salmon on a parchment-lined baking sheet or air fryer basket.
  • Bake for 10–12 minutes or air fry for 8–10 minutes until cooked through and flaky.
  • Drizzle remaining hot honey over the cooked salmon.
  • Assemble bowls with rice, cucumber, avocado, and salmon.
  • Top generously with peach salsa.
  • Garnish with lime wedges, green onions, and additional hot honey if desired.

  • Store components separately in airtight containers.
    Salmon: up to 3 days, Rice: up to 4 days, Peach salsa: best within 24 hours
