In a bowl mix together all of the ingredients for the burger and roll into 4 patties.
Over medium high heat, cook the onion slices in a little bit of olive oil for 2-3 minutes, add the pineapple rings on top and then flip the onion slices over to cook the pineapple rings for and additional 3-4 minutes. Set those aside.
In the same pan, add in about 1 tbsp of olive oil and cook the zucchni sticks for about 3 minutes before adding in about 1/4 cup of pineapple juice, place the lid on the pan and cook for about 3-4 minutes or until the zucchini sticks start to get tender and golden brown.
In that same pan, cook the burgers, flipping once until the burgers reach an internal temperature of 165°
The burgers and onions can be cook on the grill, up to you!
In each container, add:- ¾ cup of coleslaw mix to the bottom- 1 burger, topped with pineapple and onion- zucchni sticks
