If there’s one thing I’m always trying to do in the summer, it’s take those classic recipes we all know and love…and make them feel just a little more elevated without adding a bunch of extra work. Because listen, traditional pasta salad? It’s fine. We all eat it at every BBQ, potluck, swim party, or family get together. But sometimes I want something that feels a little more special. Something that looks impressive sitting on the table, tastes like something you’d order at a cute restaurant patio, but secretly took almost no effort to throw together.
And THIS pesto burrata pasta salad is exactly that.
The first time I made this, I immediately knew it was going into my summer rotation because it checks all the boxes for me. It’s fresh, creamy, bright from the lemon, packed with flavor, and feels fancy without actually being fancy.

Pesto Burrata Pasta Salad
Ingredients
- ½ lb campanelle pasta
- ½ cup extra virgin olive oil
- juice of 2 lemons
- salt + pepper to taste
- 1-2 cups arugula
- 1 cup grated parmesan cheese
- 8 oz burrata cheese
- ¼ cup chopped pistachios
- ⅓ cup basil pesto
- ½-1 tsp red pepper flakes
Let's Make It
- Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and let cool slightly.
- In a jar or bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Add pasta to a large bowl with arugula and parmesan cheese. Pour over the lemon dressing and toss well.
- Transfer to a serving bowl and dollop pesto over the top. Add burrata and gently break it apart slightly.
- Finish with pistachios, red pepper flakes, extra lemon juice if desired, salt, and pepper. Serve immediately or chilled.
